    Talk about coming full circle. I took a keen interest in this channel, learned so much. Now I’m working in a Italian restaurant about to make this salad as part as my first staff meal for everyone. Love it.

    This is a great dressing and has become my go to for salads. I have a couple tips for people. The first 20 times I made it I slowly added the oil to the blender. The last 2 times I just put everything in a smoothie cup for my blender and it came out the same. Since there are only 2 of us in the house, I was throwing out some of the dressing before I could use it. I thought it wouldn't work freezing it, but I tried it and it worked perfectly! It didn't even separate when thawed. I also put all the cheese in the dressing as I find it can fall to the bottom if you add it to the salad. Finally, I buy the 3 LB bag of peeled garlic at a warehouse club for making the roasted garlic.

    Love how Steve always references family memories in his videos and recipes - in this case the sesame bread and his grandfather. My wife is Italian, and family is what food and cooking is all about. Big fan

    It’s like 10:30 at night and I want to get dressed again and go buy Tuscan kale and make this salad now lol I LOVE LOVE LOVE your recipes, Steve 💯👍❤️ I only wish my Italian Grandfather was still alive so I could cook them for him!     A good method I found to emerson blend the sause is to keep the blade submerged in the egg part so that its halfway between those wholes on the blade guard. This makes it so it blends up very quickly, I would also suggest you pre-blend all your non oil ingredients because when you're using olive oil and this method the rotation causes the oil to oxidize which makes it go bitter. That's also why you should not use any expensive olive oil even if you wanna splurge because those are bitter already and it will make the sause taste bad.

    Vibrant dressing adds depth of flavor to the salad and juices are flowing with every bite of the leaves of that darkish green kale.

    5:42 - yes, strips! It blows me away how many people make salads with a giant chunk of a lettuce or leafy green. The dressing ends up all over your face when you go to bite. I'm always looking for that chopped salad; it eats way easier.

    Bruh boil carrots til soft then fry em/roast/grill with some oil on em whatever til they yummmmy af and crispy, add that to your salad and add a peanut butter dressing, heaaaveennn

    Excellent video! Thanks! Everything was fantastic, but great idea to use the breadsticks for croutons. I usually use sourdough or focaccia chunks and toast them with the oil and seasoning on them.

    One more thing my Poppy perfected was “Tripa” or Tripe in a delicious tomato sauce; lots of bay leaves garlic and peppercorns. Do you have a recipe for that? He was Neapolitan and Romano and it was awesome!! Nice white honeycomb tripe was key . TYIA 😉

      OMG I loooove tripe, though I rarely have it. Funny enough, I made a dried fava bean stew last week and it tasted as if it was a tripe stew. I used similar seasoning .

    just wanted to clarify, the vid says one clove for the dressing but the recipe on the link says one HEAD and one clove. one head seems a bit excessive but just making sure.

    May I ask what kind of kale this is. I have a flat leaf in my garden but it seems very tuff for salad,even chopped chiffonade style. It only seems great in soups.

    imo best salad utensil is chopstick not fork...to fork something the object needs depth, salad leaf has no depth, so even when you get it on the fork the tines of the fork are barely poking through

    So - Colavita EVVO is about $20/25 ounces where I live. I saw you were using it as a "cheap olive oil". I thought it was pretty expensive, lol. I'm always open to a superior product. What do you recommend?

      California Olive Ranch 100% California is the GOAT! It retails for $10-15/34fl oz depending on where you get it from and it’s so fucking bright, peppery, and delicious. I’ve done multiple blind taste test at home and i prefer it over any other EVOO (even the fancy foreign stuff). Get it at Sam’s Club or Costco if you can for the best price. Second choices are Cobram Estate 100% California or Zoe’s (from Spain).

    This sounds amazing with the Calabrian chili!!! 😍😍😍🤩 Homemade Cesar dressing is the best!!! I have to make it on the sly my kids don't know I use a raw yolk 😄😆 ...but they love it! ❤❤❤
