I just bought a cast iron enameled lodge Dutch oven, but it doesn’t have the double pan lid. Can I still cook over an open flame with this model? Obviously I can’t bake, but what about a stew or chili?

Bless your heart, you have a kitchen Dutch Oven instead of a camp Dutch Oven which has three short legs and a top with a rim for holding coals. You can use a kitchen Dutch Oven, but it is much more difficult and not designed for outdoor use.
Just got one of these and looking forward to trying it out. Do the coals on the lid really help much or not worth the mess? (would love to keep the oven as nice/new looking as possible)

If I can remember correctly it was about an hour to an hour and a half. I kept an eye on it, those coals were really hot and cooked the chicken quicker than I thought. 😃

Pretty sure the enameled cast iron has temperature limits. I would check with the manufacturer first. 😊

I just purchased a Cabelas dutch oven. What size fire do you advise when cooking up the beef? then adding the rest.
I use a low flat fire, letting the wood burn in low flames. Hope that helps.
