    These look amazing! Just to be clear though, tangzhong is Chinese, yudane is the slightly different Japanese version

    Just a question: the ingredients list mentions both milk and water but in the video, only water is added. did I miss something somewhere?

      The water is used to make the tangzhonng and then the remaining water is used to make the cross

    When making the tangzhong, do you use plain or bread flour?

      Use the same bread flour that you are using for the dough, the gluten content isn't so important as it gets cooked to create the paste that holds a higher hydration. Let me know how you get on with the recipe.

      @@londonchef thank you for a speedy reply 👍 will definitely be trying these. I did make hot cross buns over easter and even though they were very nice, they still were not as fluffy and light as I had wanted, they also were a bit on the solid side after just one day (the badgers got the ones we didn't want!). If you have any other recipes and tips on bread/dough using the tangzhong method i would be most grateful. It would also be very helpful to see them in a step by step guide here on UA-cam. Thank you....much appreciated 💕
