All most all of the positive appearances of Gilgamesh are either entertained or kept busy (Strange/Fake has him meeting Enkidu again, CCC has him debuffed and severely weakened, etc) and all of his negative/antagonistic appearances are him when he's annoyed or bored (Zero has him constantly cooped up in Tokiomi's base, and Stay Night is him being annoyed at the consumerism and mass-production of the 21st century).
Nicest version of Gilgamesh can also be applied to Caster Gil. To which he probably also would’ve been pissed in this very same situation. (Kingu was an exception because he was created from Enkidu’s body)
Just imagine how cool would have been if his voice suddenly changed to his adult form just before disappearing, it would be something like "Dance to your heart´s content, and keep me entertained, MONGREL" being the last word the one in his adult form and with a tone full of superiority.

He can't afford a screw up unlike his older version since Kid Gil here is at a disadvantage with most of his treasures in the Gate of Babylon stolen or being used by Angelica.

Regular Gil wouldn’t worry about busting out a cloak of invisibility or maximizing his resources. He’s far too arrogant for that. Much harder to catch Kid Gil off guard when he offers so fewer openings. Less firepower than OG Gil until he gets his card back, but plenty dangerous.
If Gilgamesh was competent, he wouldn't have wasted time bolstering his ego and pride and killed Shirou in both the Fate and UBW route with no haste. He may be more powerful than Kid Gil, but he is not smarter by any means.

Pretty sure the child form is inspired by his search for immortality actually. This would be a Gil that found and managed to use it, placing him after the adult Archer, but before Caster in the Epic's chronology. His maturity lines up with that interpretation as well. Wisened by Enkidu's death and his subsequent quest, but not humbled by his failure.
This is just Gil after taking the elixer of youth to become young again, he retains his memories and knowledge but his personality reverts back into what his child-self used to be, thats why there's such a stark contrast to his seemingly innocent personality to that terrifying anger of his, he's arrogant because he knows he can be arrogant but he's much more cautious and knows what he can and can't do in that form, basically Gilgamesh if the pride that usually cucks him is actually tolerable.
