    INGREDIENTS
    GINGER WATER:
    1 1/2 tablespoons minced ginger
    1/4 cup hot water
    DOUGH
    250 g (1 2/3 cup) all-purpose flour
    50 g (1/3 cup + 1 tablespoon) cornstarch
    4 g (3/4 teaspoon) instant yeast
    5 g (1 teaspoon) sugar
    150 g (2/3 cup) warm water (*Footnote 1)
    15 g (1 tablespoon) vegetable oil
    FILLING
    8 oz (227 g) ground pork (*Footnote 2)
    1 1/2 teaspoons light soy sauce
    1/2 teaspoon dark soy sauce (or soy sauce) (*Footnote 3)
    2 teaspoons Shaoxing wine
    1/2 teaspoon salt
    1/4 teaspoon sugar
    1/4 teaspoon ground white pepper
    4 green onions, sliced
    1 tablespoon toasted sesame oil
    COOKING & GARNISH
    4 tablespoons vegetable oil
    1/2 cup hot water, separated
    Chopped green onions, for garnish (Optional)
    Roasted sesame seeds, for garnish (Optional)

    at first i found the music dramatic, but then it was so fitting because this video was done like a masterpiece. it was really fun to watch. can't wait to try it out myself someday soon!

    What is a good substitute for yeast? Does using self-raising flour help for the flour to rise?

    I made it today, everything worked perfect, except the filling was not salty enough. I suggest a bit more salt and soy sauce, otherwise perfect !!! thank you for the recipe

    2 questions: that short cooking time is enough for the meat inside? How do you add water to the hot pan with oil without starting a fire??

      adding water to hot oil wont 'start a fire', for the most part adding water to this much oil is safe.. you might be confusing trying to extinguish an oil fire with water. also the time is more than enough to cook the filling

      When you cover the pot the condensation creates excess moisture that drips to the pan even without the additional water. Thus causes a steaming effect which allows the water to safely mix with the oil.

      It goes into the filling to make it juicy fragrant without the bits of ginger
