How To Wash & Season Chicken Like A Trini | Foodie Nation

- Chef Jason teaches Kezzianne how to wash, cut up and season chicken like a Trinbagonian, using freshly made Green Seasoning:
GREEN SEASONING INGREDIENTS
Chive - 6 Sprigs
Chadon Beni (Culantro) - 30 Leaves
Garlic - 10 Cloves
Thyme - 5 Sprigs
Scotch Bonnet Pepper - 1 or To Taste (Seeds Optional)
Pimento Pepper - 10
Water - 1/4 Cup
METHOD
1. Wash all ingredients.
2. Grind all ingredients in food processor or blend in blender.
3. Add water to food processor if seasoning is too thick and isn't grinding.
4. Store in a sealed container in your refrigerator for up to ten days.
CHICKEN PREPARATION INGREDIENTS
1 Whole Chicken (about 4-5 lbs)
Options: 1 Large Lemon or 4 Tbsp Vinegar or ¼ Cup All Purpose Flour
Running Water
1 ½ Tsp Salt
¾ Tsp Black Pepper
3-4 Tbsp Fresh Green Seasoning
METHOD
1. Place whole chicken onto a clean cutting board. Using a sharp chef’s knife, cut between the joint of the thigh and the drumstick to remove this first piece of poultry. Do the same with the other drumstick until you have two pieces detached.
2. Secondly, hold chicken by the thigh region and crack the thigh backwards to dislodge the joint from the spine. Cut through that joint to separate the thigh and repeat this step with the other thigh.
3. Thirdly, hold wing from the drumette part and make a cut through the flesh that connects it to the breast. Repeat with other wing.
4. You are now left with the center part of the chicken which contains the breast and back. Cut straight down the center of the breast into the back to yield two pieces. Then cut each piece into three smaller parts across.
5. Rest chicken pieces into a medium mixing bowl and place under gentle running tap water.
6. At this point, you can either choose to squeeze the lemon juice in the water and wash chicken pieces with that to remove any freshness or even use the vinegar. The flour can also be added to the water to help cling to any minimal slime on the chicken and when washed off this would pull the freshness and slime off once water is drained from chicken.
7. To season chicken, sprinkle on salt and black pepper to the pieces and using clean hands, mix well.
8. Add the fresh green seasoning and continue mixing and massaging the marinade into the chicken pieces for even distribution.
9. Cover bowl with plastic wrap and let sit in chiller overnight for maximum marination or a minimum of 2 hours if time is against you.

You'll need to be on TV. The chemistry is great. I put a lil ginger in my green seasoning. After coating my chicken with the seasoing, I add a tbsp of yellow mustard and store the seasoned meat overnight.
Oneka Anthony never tried the mustard. What does it do? Interesting I should try this!

Love washing my meats with flour it doesn't toughen up the meat but manages to get the freshness out. Adding a little salt to the flour while washing the meat helps also to get rid of the freshness. Thanks for the tips of cutting the chicken up normally to make my life easier I buy the chicken cut up. It's better to do it yourself. I do my seasoning exactly like how u do yours in this video. I like to add ginger and white onion to mine. Also i blend it with a touch of vinegar when i make huge batches. The vinegar keeps it fresh in the fridge for months without having to freeze it.

Just tried to make this seasoning. We don't have chadon beni here, so used coriander, no pimento so subbed with padron peppers. Threw in some rosemary, parsley, and lemon juice cos it was there! And a few dashes of bitters. Now seasoned chicken drumsticks and some home-made bbq sauce. It's going to be lit! 🍗🔥

This is my EXACT recipe for seasoning. Doesn't need anything else. Onions, ginger etc may be added while cooking. But when that meat is seasoned and marinates...no other seasoning is necessary; u can add but it's not necessary. And I only eat chicken breast...nothing else. No wings here, Chef 😂 Great learning video for the newbies. Keep up good work 💜

When we make sofrito/ green seasoning, we use oil not water. Water tend to spoil it quick n it looses it flavor. N we add in more ingredients. Thanks for your recipes. I haven't done my Palau in ah long time and I love how u did yours. Nice and moist. Although I like corn, I would not put it in my Palau.
Some people wash it with bay leaf and add a splash of angostura bitters to the seasoning...I think it pairs well for any kind of baked or bbq chicken.

Is there any particular reason why onion was omitted? I ask this because I'm wondering if I have been doing something wrong by adding onion to the mix . Looking forward to your response. Blessings!
I add onions to my seasoning also, fine thyme is a must it gives a nice flavour.

Every Sunday I get my green seasoning and blend it an bag it up, put it in the freezer for the week.
You could also use yeast works just as well

I knew about flour for a long time
I dont blend everything together. I blend peppers alone, garlic alone n green seasoning( bhandania, celery, parsely ) alone. Reason being, some foods need more of certain seasoning than others. For eg, soya or duck ..

I clean off all the skin and fat and I go in and clean the old blood in the thigh and the back. My preference. Leave that meat to marinate for a few days....
