    Serves 4
    low-calorie cooking spray
    3 garlic cloves, crushed
    2 green chillies, deseeded and chopped, plus sliced chilli to serve
    227g can chopped tomatoes
    2 tbsp syn-free curry powder (check labels for Synned ingredients like sugar, flour and oil)
    400g lean beef steak, visible fat removed, cut into thin strips
    2 large onions, cut into wedges
    2 large peppers (1 red, 1 yellow),
    deseeded and thickly sliced
    2 tomatoes, cut into wedges
    1 level tbsp cornflour (if needed - add 1/2 Syn per serving)
    2 tbsp fat-free natural yogurt
    Spray a large non-stick frying pan with low-calorie cooking spray and place over a high heat. Add the garlic, chillies, chopped tomatoes and curry powder and cook for 3-4 minutes or until the vegetables have softened.
    Add the beef and cook for 3-4 minutes, turning regularly. Pour in 200ml boiling water, reduce the heat to medium and simmer for 10 minutes or until the beef is tender and the sauce has reduced by about one-third and thickened. Stir occasionally.
    Meanwhile, spray another non-stick frying pan with low-calorie cooking spray and place over a high heat. Stir-fry the onions and peppers for a few minutes or until lightly browned. Add the tomato wedges and fry for a few minutes more, stirring often.
    If you need to thicken the sauce, mix 1 tbsp of cornflour with 1 tbsp cold water to form a smooth paste, then stir it into the beef and simmer for a minute stirring constantly (add 1/2 Syn per serving) Add the onions, peppers and tomato wedges, then remove from the heat and allow to cool for a few minutes before stirring in the yogurt. Scatter over the extra chilli and serve with rice.

    Still makes me laugh when SW calls Curry Syn-Free (which a lot of the curry recipes in SW are) ... how d'you think I got to SW in the first place!
