Slimming World Syn-free Captain's chicken curry recipe - FREE

2 red chillies
1/2 tsp chilli powder
250g shallots
2 tsp five spice curry powder
2 tsp turmeric
6 garlic cloves
50g fresh root ginger
2 lemongrass stalks
400ml chicken stock
2 cinnamon sticks
1/2 tsp sweetener granules
8 skinless and boneless chicken thighs cut into strips
300g trimmed green beans
2 large carrots
1 tbsp lime juice
fresh coriander
Put all the curry paste ingredients into a food processor with 3 tbsp water and blend to a paste.
Place a large non-stick pan over a low heat, add the curry paste and fry gently for 4-5 minutes until aromatic.
Add the chicken, sweetener, green beans, carrots and the stock and cinnamon sticks. Bring to the boil then reduce and simmer for 25-30 minutes until the chicken is cooked .
Remove the cinnamon sticks, stir in the lime juice and coriander. Serve straight away.

Had this before it's one of my favourites
This is a fabulous dish. I made twice the curry paste and put it in ice cubes in the freezer. I used it for a couple of different curries.
