Immune-Boosting Morning Vegetable Soup Recipe

  • Ingredients (2 servings, for 2 meals):
    - 2 medium-sized tomatoes
    - 1 celery stalk (leaves removed)
    - 1/3 zucchini
    - 1/3 carrot
    - 1/4 onion
    - A pinch of salt and pepper
    - 3 cups of water
    Bay leaves and garlic are optional additional ingredients.
    Instructions:
    1. Chop the tomatoes, celery, zucchini, carrot, and onion into small pieces.
    2. In a pot, add the chopped vegetables and water.
    3. Bring the mixture to a boil over medium heat.
    4. Once it starts boiling, reduce the heat to low and let it simmer for about 15-20 minutes until the vegetables are soft and tender.
    5. Remove the pot from heat and let it cool slightly.
    6. If desired, add bay leaves and garlic for extra flavor and simmer for an additional 5 minutes.
    8. Season with a pinch of salt and pepper, adjusting to taste.
    Serve the immune-boosting morning vegetable soup hot and enjoy!
