Homemade Malt Balls | Copycat Whoppers/Maltesers/Candy Store Chocolate Malt Balls

- This homemade chocolate malt ball experiment is my attempt at copycatting commercial products like Whoppers, Maltesers, and candy store chocolate malt balls.
Whether you’re making the foamy candy method or the meringue method, the malted centers are absolutely delicious even without dipping in chocolate. You can adjust the amount of malted milk powder used depending on how milky or malty you like your candy to be.
You don’t actually need a chocolate mold, feel free to just dip the malt candy or meringue as is, they are both absolutely delicious if you’re a fan of malt balls.

Kitchen Hammer I used (part of a coconut opener set): amzn.to/2VAKe5F
Sponge/Seafoam Candy Recipe: (closer to Whoppers texture)
½ cup sugar
¼ cup water
2 tbsp corn syrup
1 tsp white vinegar
1/4 tsp gelatin
1 tsp baking powder
2 tbsp malted milk powder
Bloom gelatin in vinegar. Heat sugar, water, and corn syrup to 300F. Chill to 270F or below. Add bloomed gelatin, stir until fully combined. Then add baking powder. Whisk and heat up the syrup until it’s very puffed and foamy. Immediately pour into a cooling dish. Let cool completely. Smash with a hammer and nibble away.
Meringue Recipe: (closer to Maltesers texture) - makes 2~3 sheet pans of malt meringues
1 egg white
¼ cup sugar
⅛ tsp cream of tartar (optional)
2 tbsp malted milk powder
Beat egg white with cream of tartar and 1 tbsp of sugar until very fluffy. Add in the rest of the sugar and beat until meringue is very thick and pulls long stiff peak. Gently fold in malted milk powder. Pipe into little dots. Bake at 265F for 15~20 min, until meringue is completely dried and crispy.
Dip in your favorite chocolate. Enjoy!

I'm going to try this with a white chocolate strawberry flavored coating. My dad used to love the strawberry milkshake whoppers, but I haven't seen them in years. With his birthday coming up, this could be perfect!
I've never seen strawberry whoppers, loved strawberry KitKat though! Ground freeze dried berries are great for flavoring, they won't look entirely homogenous but they look and taste special!

It's easier to crunch up the meringue in food processor or blender then add 1 cup to your regular malted milk ball recipe & they come out truer to the malteser candy 🍬

Too bad you have to get to the very last partof the video to see how to make them correctly but mine turned out just as i like and whoppers are just not good if you're a big malt ball fan like me. I tried this recipe it was soo tasty I didnt knew such less ingredients would make such a good thing I didn't had malt powder so I added almond powder it was so delicious. Thank you so much ❤❤
Dried malt extract is a good sub to add malty flavor, but yeah any nut powder will do well for adding flavor, have fun trying out different flavors!

I love maltesers
I priced Maltesers at 12.95 for six 37g bags through Walmart. Whoppers used to be better but are just sugar bombs now. I recently bought the same malted milk powder to make my own chocolate malts with Boost glucose control shakes because everything is oversweetened these days.
You could also use Dry Malt Extract for an extra boost of malty flavor - I only discovered it after getting hooked on homebrew & mycology. Now I can make my own malted milk!
You can simply mix white chocolate chips with a malted milk mix like Ovaltine. I have the recipe. Don't remember exact ratio, but it's mixed in my recipe somewhere. I will find it and write it in the comments.
I had often thought that they used malt syrup and bicarbonate to make Malteser centres.
I don't know that malt syrup will stand heat as well without affecting flavor. From purely cost perspective I would expect the bulk of the syrup to come from plain sugar, with malt extract added later.
I need to find one of those candy thermometers. I have the old fashioned one.
Old fashioned thermometers are super reliable. If you like an extra infrared thermometer for convenience, the kind I used is linked in the description 😀

Though (malt) balls are gluten balls, has anyone heard of gluten free chocolate ball that thoughly look like malt balls even on the inside? There's Doisy & Dam Ballers, Creative Nature Gnawbles Creamy Mylk chocolate, and Schar Delishios. Those are the only Known brands of gluten free malt balls that are thoughly Rice and Corn Balls with those flours. I think malted milk could've just included wheat starch and wheat starch only (as a real milk product).

Rather than using a silicone mold, wouldn't a metal mold of the same shape theoretically produce better results? Silicone is designed to be heat-resistant, and may be preventing the meringues from properly cooking. I may experiment with this at some point. Love the video, by the way :).
Definitely curious how your experiment will turn out! Metal might be trickier to unmold, definitely grease yours well!
