    Excellent work sir. Im still trying different cook temps and times for ribs. Nobody wants to wait 5 to 6 hours for some. Im trying some soon on the Kamado Jos with the sloroller. Does a great job providing even heat at grill level. Did some at 250 and were perfect in 3~1/2 hours

    You seem to contradict yourself. If you like the hot-n-fast ribs because of the time savings ( as you said maybe you got kids or whatever )
    I am thinking you are having to babysit them hot-n-fast ribs because you have to turn them every 15-20 mins to prevent them from burning.
    Low n slow...put them on for 3 hours to start ( go play with your kids uninterrupted )
    At the point of wrapping them in foil, the process for both is essentially equal.

      I see what you’re saying. Involvement during the cook, I’d say the hot and fast have more. That being said, it could depend on the pit. Low and slow on a stick burner is going to be a little more involved with tending a fire.
