It's very rare I do slow cooked/smoked ribs. Usually I have about an hour to work with... after work. I can honestly say, they are VERY close to slow cooked . Once mine are done, I leave them wrapped in foil for 10 minutes. The condensation seems to add more of the "tenderness" that we all love. Sometimes a little hard to pull off the bone depending.. but I'll deal with it.
I cooked ribs like this for twenty years before I got a pellet grill. Was always good! I would glaze a barbecue sauce the final 15 minutes. The initial caring definitely adds a great taste to the ribs!

Nice Tommy! I liked your last quick cook on ribs and I think people are missing out when they don't have a kiss of char on the ribs. Sauce also brings out a nice flavor when added to those charred areas :)

Would be cool to see how a reverse sear method would work on the ribs cooking them at a lower temp then sear it at 700 to finish them off. Might keep a little more moisture in them that way. Did you see the new Masterbuilt 800? Wonder what improvements they’ve made to the overall design, it comes with some neat accessories as well.
I've got the 800 coming Monday and my only problem with your method is that the Masterbuilt really doesn't sear that well. So you'd be doing just another low and slow.

Tommy, you're officially the bad boy of BBQ for going to 700 degrees! 😁 So what's your preferred cooking method for ribs now since you've tried multiple techniques.
Hey Tommy?? Are You giving Me or everyone the Finger!?!? What's Up with that? LLLL. But really.........a HnF Grilled Loin Rib is Killer! Loin Ribs are perfect for this method......no fat marbling to break down or render out. Almost like a grilled Pork Chop! I would just say.... you should choose and recommend to your following a Rub with No Sugars added. The taste of charred meat is so much better than when there is burnt sugars on it. You know what I'm saying,... You know what I'm saying,..... You know what I'm saying??? 👍😁 \m/

That was too much charring. There's not supposed to be black carbon bits falling off like that. It's not tasty or healthy. Also, maybe someone knows the answer to this, but I was always under the impression that going to 200 degrees was only for a slow-cook process. That for a fast cook it doesn't loosen up the fibers and just leaves the meat dryer. Would anyone want a T-bone pork chop grilled hot and fast to 200 degrees or rather to 155 degrees.
