    I’ve been watching you for a while now and truly enjoy you! I really never realized it before but my husband and I were homesteaders for 20 years. We loved it and learned so much. We lived at Colton, Oregon. We now live at Troutdale, Oregon. We have been in Gresham Oregon for the past 30 years. My husband is from ND and I am from IOWA originally. We will celebrate our 60 th anniversaries in January. When you made the porcupine balls I had to laugh because my mom made those all my life. They were so good and I made them too for our family. We also made scalloped potatoes a lot. Mom always made something called scalloped corn with it. So so good. It has creamed corn a little milk a little sugar a couple eggs. A couple sleeves of saltine crackers. Crunched up. Bake about an hour at 350. Mom always put it in the oven the same time as the scallop potatoes. We nearly always had ham with it. My dad was a dairy farmer and also raised several quarter horses over the years. He was a real comboy. Including hat boots belt shirt and pants I’m 81 years old now and don’t do most of these things anymore but I sure like watching. I still make bread when I’m well enough. I think I enjoy watching you because you’re real. Love you lots and I wish you the best. From CJ

      I still make scalloped corn. It’s my husband’s favorite. I also make scalloped potatoes. We are still on our homestead in the upper Midwest.

    Similar to a Bakewell tart. Bakewell is a town in England and this is a historic tart. We use ground almonds not rice and call the topping frangipan. We also blind bake the pastry before putting jam and filling in, which may solve your issue 😁

    Yes, we've included the Raspberry Almond (Marzipan) Bar Cookie in our Christmas Cookie lineup for a couple of decades. There is one difference, though. Our recipe uses almond flour in lieu of rice flour. Like you, we all favor almond flavor!

    In the UK we call the recipe Bakewell Tart and traditionally cherry jam is used, but any red jam is good, its all yummy ! For the pastry issue try a traditional uk sweet shortcrust pastry but be accurate by weight in your measurements and it should solve the problem 😊

    My crust was the same way this Christmas with my buttermilk pie. I think I didn’t add enough ice water to the dough. Much respect to you Chelsea for being honest.

    Your dad’s squares sound a lot like a British Bakewell tart which also has pastry, jam and marzipan!

    We all make flops sometimes, sounds like you were having a ruff day yesterday lol. I have never heard of anyone making that recipe in my years of growing up, I have never tried it, but it looks delicious. I love broccoli salad, especially when it is cut really small, we have a grocery store here in our area that makes it and sells it in the deli and it is truly delicious.

    You are just like visiting with a good friend and laughing together at mistakes. THE BEST! I can't wait to try the marzipan as I've never had anything like that - I also love almond and will share a really old, easy, but sounds complicated recipe my grandmother passed on to me - I'm 77 and she was old then so It is probably way of 150 years old. I'm so busy right now I can't - just stopped to rest and watch you but I must get up and frost a gingerbread house for a wedding shower tomorrow. THANK YOU so much for the snow! I was raided in Wisconsin and moved to Florida as a teen and do miss the beauty - but not the driving. Your cows are so very sweet!

How do you decide which seeds are good for microgreens? Are they bitter at all? If so, how do you counter that?

    The marzipan you make is similar to a treat my nanny used to make - she originally used smashed up rice she used to put it in a bag and smash it with a heavy bottomed pot, later on she used baby rice in hers as wouldn't have any "new fangled" equipment in her kitchen lol - the fridge was in the breakfast room not in her kitchen. She also washed EVERYTHING by hand and used a mangle up until she died some 25 years ago. It's also very similar to an English Bakewell Tart - both are lovely. FYI: Marzipan in England is an almond paste you put onto cakes before you ice with Royal Icing., it's often made into fruit shapes and painted to look like the fruits, also used inside cakes.

    The marzipan bars are very similar to almond slices, which we have in the UK and also Bakewell tart. I also love anything almond and always buy an extra block of marzipan at this time of year. One to cover the Christmas cake and one to stuff dates with, wrap around cherries and then coat with dark chocolate and then any leftovers just get nibbled on. I also use it to make a cake which calls for a full block of chopped marzipan to be added to the batter before baking. Very, very naughty, but oh so nice😊

    Our family’s broccoli salad recipe is identical, except we started par-boiling the broccoli. Or steaming ( I’ve done both).
    Just ever so little. And the. Immerse immediately in an ice bath.
    It gets greener, a *touch* more tender while still crunchy and fresh, and I was told makes the vitamins etc more bioavailable. 🤷‍♀️😊

    We pick up our dwarf Nigerian goats tomorrow. One is pregnant. I read goats like their neck rubbed but not the top of their heads like your cow. Chickens are next!! We live in the city but our area is zoned so we can have farm animals. Nigerian Dwarfs are considered pets too. Love your channel! I like looking at snow but hate being in it. In 35 years we have had two snows. Once it was on Christmas Day which was magical.

    I make broccoli salad the same way. So delicious. Sorry your marzipan wasn't exactly the way you wanted. But, we all have those days! We just gotta roll with it. 😂

    Beautiful snowfall when it comes in small doses! We got a beautiful wet snowfall here in central Alberta yesterday & it looks so pristine!     😆 I once made a deep dish apple pie where the apples cooked down like they were suppose to but my top crust formed a weird hard shell that was like three inches above the apple filling. It was awful. Still no idea what went wonky with it. As for the broccoli salad, it was always my mom's favorite.

    Frangipane!! or Bakewell!! It's divine with melted chocolate swirled through it with cherries!! Valentines Day. It works also without the crust for gluten free people, just line with parchment.

    The marzipan bars recipe is very similar to a very popular British dessert called Bakewell tart named after the village of Bakewell in the NW of England.

    Your marzipan squares would be called Bakewell Tart in England, originating from the town of Bakewell in Derbyshire. A variation is called Cherry Bakewell, which is your cake with a thick fondant icing covering the top and decorated with glace cherries. Both are still very popular and sold in supermarkets and bread shops - bread shops sell bread baked hours before the shop opens and encompasses many variations of bread not found in supermarkets plus also a load of cakes and pastries. One famous chain of bread shops is called Greggs and they sell sausage and meat pies as well. Ask any English person if they know of Greggs as they are that famous throughout the land. Tea shops sell home made cakes and scones too. Tea shops are sort of cafes and usually just sell teas, scones and cakes, although latterly I have noticed they are adding other snack foods to their menus to increase their revenues. Sorry if you know all this already, just spreading the word to American fans of yours!

    Because I don’t do well with raw broccoli 🥦 always blanch it slightly then cool it before making salads. It is a favor veggie though.
    I think I’d just use my shortbread crust for the marzipan. It does look yummy though. I’m sure the kids would have no problem eating it all!

    Gosh I had to giggle. Sometimes our mistakes are just as tasty whether it's a tough crust or not. It all seems to disappear anyway. We also had 4 or 5 inches of heavy wet snow in Red Deer last night. Finally looks wintery and Christmas like. I think I need to start Christmas baking, thanks for the inspiration.🌧🌦☃

    What you call Marzipan is an almond paste (amandelspijs) here in the Netherlands used as a filling in Christmas bread (stol) and pastry (amandelstaaf). Marzipan (marsepein) is made slightly different and shaped in different shapes usually a pig or vegetables and eaten as candy.

    I make something similar, but different at the same time. I call them Almond tarts, or Bird Nest Tarts. I use to make my pastry, now I just buy frozen pre-made tart shells for convenience. It has raspberry jam in bottom, topped with a crumbly mixture of pound cake/eggs/sugar/almond extract, and once baked & cooled, I make a thin icing sugar and almond extract glaze to top it off. It’s a hit with everyone I share with, and always requested. It’s one of those baked goods I only make at Christmas, and it’s always at the top of my to-do list once December rolls around.

    Hi from Kentucky, Ido agree on the cutting board not being an issue. But if you want to you can sand it down when an electric sander and then recession it with some mineral oil just let it sit till it dries.

    Had to laugh. Your recalcitrant pastry crust reminded me of my early efforts. Used to follow a recipe religiously and made hard as leather crusts. My Grannie and aunt just threw the ingredients in, mixed, came out great. I got really mad at it one day, and dumped the flour etc in, no measuring, came out just fine. Have never measured since.
    Btw, I really like your ceramic mixing bowls! I have a Gripstand from England my Gran bought for me when I was learning to make bread as a teenager. Still treasure it going on 60 years.

    It's very easy to sand your cutting board if you have a sander, wich I presume you have! Then re-oil it, and it's like new. So much better then buying a new one. Perks with wood😊!

    I am from Dutch descent, marzipan cake was a staple at Christmas!! My husband also makes these in tart shells so they are bite size. Sooo yummy!❤

    Dutch background here. Parents immigrated to Canada. Lots of marzipan desserts and recipes made and eaten over Christmas seasons. Never found anyone who ate those either.

    We might get our 2nd on record green x-mas this year. We have maybe 1" or so of snow on the ground and warm clear weather in the forecast. 1997 in the only time that has happened since records began. I hope they are wrong as I love snow and prefer -10c - -20c temps as its dry. beautiful happy cows.

    Your marzipan squares are similar to Bakewell Tart in the U.K. I think almond is a Christmassy flavour, in Germany they make almond cookies, and marzipan sweets, as children our German family used to give us each a marzipan pig! A sweet treat indeed x

    My parents used to make marzipan candies at Christmas but used almond paste. It was mixed with confectioners sugar and they formed it into cute fruit and veggie shapes, tinted accordingly. A Northern European tradition, maybe? I search for these every year.

    The marzipan you make is kind of different from the one I have had. A family from Mexico gave me marzipan for Christmas one year but it was basically the filling you make without the jam or pastry. They rolled it in icing sugar so it didn't stick together.. it was delicious!

    Two ways to get ground rice.
    Way 1 cook rice until just done then dehydrate it. Grind it util slightly smaller than grits or sand.
    Way 2 buy minute rice and grind it to the same consistency.

    Yum! The raspberry dessert. I’ve got to try that! It’s way too warm here in Northern Michigan too! It was 50* F today, 12/16/23! Crazy. We have no snow at all.
    Tip: use a bench scraper to get that extra flour off your bench/counter. 😊

    Oh! I made your radio cookies the other day, because I for years made a similar cookie but lost the recipe...yours were delicious!! The store was out of raspberry jam (a crime, really!), so I had to use apricot, but I like apricot just fine. They were so soft and lovely! I don't love almond flavor, so marzipan might be out for me, but I feel you on the crust! Sometimes baking is hard, ok 😂😂

    I use maple syrup instead of sugar when I make broccoli salad. It adds something that the sugar doesn't.

    hiya - watching more of your backlog! so no, i have never heard of your dad's fav marzipan treat - down here in the states, marzipan isn't as popular as it is, say in europe or probably Canada too?
    your cake looks yummy - my mother has a Christmas cake recipe in a similar vein - prune cake! it may sound yucky, but it is soooo yummy - and i love the way she iced it: the very dense and moist cake is removed from the hot cake form and put into a tin foil lined cake tin. then she took a thin wooden skewer and jabbed in many holes, and poured over this still-hot cake, a hot glaze made from buttermilk and butter and powdered sugar and the cake sucks it all up and it is so yummy it brings tears to my eyes! you simply cut slices from the tin and all the goo is contained there, such goodness.

    It's not snowing here in Kentucky it's 56 degrees F and sunny. I'm ready for a little bit of snow. I grew up in Michigan and was use snow

    We call it icing sugar in the UK,too. And the marzipan bars are similar to what we call a Bakewell tart

    I make the same broccoli salad, but I use white wine vinegar! What a delicious salad.

    We call it icing sugar in Australia as well. You could still use the video, just do a voiceover on it. Blackberry or red currant jam would probably work well if you don’t want raspberry.

      Because I speak directly to the camera most of the time voiceovers are hard to do - looks weird if I’m voicing but also obviously talking to the camera, does that make sense?

    I have read that you need a pond to contain the mess of ducks. They poop in water. Then, periodically, the bottom of the "pond" can be cleaned out for the compostables that are highly beneficial for the garden. The pond might be hard in our climate though...it would likely have to be heated (?).

      I use a kiddie pool in the summer but I’m the winter it’s not feasible. Ducks naturally migrate from cold climates so makes sense.
