🔴 PANETONE ingredients:
3 cups of wheat flour (360g)
1\2 cup of sugar tea (100g)
Butter without salt or margarine 80% lipid (100g)
2 tablespoons of powdered milk (15g)
1 tablespoon of Panettone essence
5 egg yolks (78g)
½ cup of orange juice tea (120 ml)
½ teaspoon of salt
1 tablespoon of orange zest
2 tablespoons of preparation for Panettone (35g) (optional)
¼ teacup (4 tablespoons) of orange broth to adjust the mass
1 tablespoon of wheat flour to adjust the dough
½ tablespoon of wheat flour to sprinkle on raisins
200g of baked chocolate drops
100g of candied fruit and raisins
PANETONE Sponge Ingredients
1 cup of unleavened wheat flour (120g)
1 tablespoon of dry biological yeast (10g)
½ cup of warm water (120ml)
Mass yield: 1.017kg
