Holy cow, how are we here guys! Yes that is right, a developer untethered jailbreak for iOS 14 to 14.5.1 was released today supporting devices like the iPhone 12 Pro Max, iPhone 12, iPhone 11 & iPhone XS. Stay tuned for all future updates on this MAJOR Jailbreak release!
Unc0ver has been updated to include jailbreak support for iOS 14.4 - 14.5.1. For now you have to manually install the Fugu14 jailbreak and then run Unc0ver. I would highly advise to wait until it is all packaged together. Cool star is currently working on this for Taurine as we speak. Unc0ver team is likely doing the same.

Update from Cool Star: Do note this is a developer tool and isn't targeted to end users. It is not advised to install if you're an end user as the installation process is non-trivial.
As for Taurine 14.3-14.5.1, I will be implementing Fugu14's untether into Taurine directly and will package everything together. There will be no need for users to install Fugu14 separately.
Users of Taurine are advised to wait for me to implement it into Taurine and get everything packaged and polished together
Good news is that I got access to Corellium today and will be cracking at getting the untether working (and yes I did read through the untether code, though I'm just getting around to testing it on Corellium)

Major news, unc0ver has ALREADY BEEN UPDATED to include iOS 14.4-14.5.1 jailbreak support. For now you have to manually build and install Fugu14 and then run Unc0ver. I would highly advise to wait until it is all packaged together.

As a quick follow up - with that said, if we were to install using this method, would we be able to theoretically install and use Cydia fully?

I had an ipod touch Back on its release like 2008 and jailbroke untetherly and i just remember applying so many sources had the opportunity to watch Family Guy though the Apps that i downloaded through cydia. My favorite app had to be Winterboard hands down.
