Cowboy Kent Rollins Amen, Brother Kent!! As always, God Bless and The Lord, Jesus Christ, continues to bless your "mission" of filling both stomaches and spirits with goodness!! As one of those Veterans, I always appreciate your thank-yous. I remember spending Thanksgiving, Christmas and an Easter away from family. Especially the Easter in the Desert was tough but we had our own mission to complete. I always remember like it was yesterday the "joy of kissing American soil" when we landed back home. You should seen the 400plus soldier (tiny airline) pillow fight when the Captain announced that we had enter US airspace. It didnt matter what rank anyone wore, everyone was subject to catching a pillow with their face, back, arms, etc.
Much Godly Love to you and yours especially knowing Jesus is the reason for the season.

I sure do appreciate you making these videos. I remember so many of these meals my mother would make for us when I was a little kid. I used to sit and watch her cook and pester her with endless questions, "but why mom?" drove her nuts in the kitchen I did. I never could seem to get these things quite right when I tried to make them as an adult. Watching these videos has sure reminded me of all those things my mom patiently explained in the kitchen and I'm thankful for your work in bringing all these old recipes and methods back for me and everyone. Bless you good sir.

These meals were perfected by poor people who grew up during the Great Depression and learned how to make cheaper cuts of meat taste great. Frugal minded kids today could learn a lot from the past. And a young man who cooks this for a young gal who comes over for dinner would certainly be more impressive than one who orders out for a pizza.

Made this last night for my family and my wife said it reminded her of her grandmother's cooking. I'm a pretty decent cook, but this was just great. This will be my go to recipe for steak and gravy from now on. Made mashed potatoes and biscuits to go with it and it was incredibly good. Used cube steak and just made it all in the skillet instead of putting it in the oven. Once I had the steak browned and the gravy made up, I combined the steak with the gravy mix and let it simmer, covered, for about 25 minutes and the steak was super tender. Awesome!

Cooked everything in cast iron until the end, used a crock to finish it in the oven, did not have time to try and use the dutch oven, but don't forget the thyme. One of these days when I have more time I will cook this in the dutch oven with wood coals, this recipe has just the right amount of thyme. Steven

You just took me right back into my mamma's kitchen! She didn't use the mushrooms, but plenty of onions and gravy. Sometimes we had it with taters, sometimes with rice, but I was always a happy kiddo.

Outstanding sir. I had to have all my chompers pulled a couple of months ago. This has been a staple every 2 to 3 weeks since using hamburger patties. I’ll make a big batch and alternate lunches and dinners all week.

Kent, For your watchers who don't drink, Trader Joe's sells a Non Alcoholic Sparkling White Chardonnay Grape Juice, granted it's not a Pinot Noir but it is a good substitute... though a little sweeter it will add a good flavor to this dish. You are right this dose bring back memories though my mom would use Campbell's Mushroom soup as it was her go to for sauces when cooking. As I grew up on a farm where we did our own butchering often there were cuts that weren't as tender and the plate edged tenderizer was the go to for my mom. Thanks for the trip, I can almost smell it as I sit here.

    Hey Kent,
I just had a chance to try this one last night. It does take some time but man oh man it was good. I used a top sirloin and had the butcher run it through the tenderizer for me. It was so tender and rich that you could cut it with your fork. Some chunky mashed potatoes on the side and that gravy all over everything. Wow it was good.
    Thanks for another great one.

Gotta love these videos. What great cooking and in a amazing old style fashion. Thats my favorite part, utilizing the dutch oven/cast iron skillet and those hot coles and how he uses different truitts and placement of the coles to control the heat. What talent, makes me hungry every time
