Love the videos, and I also love a good steak. I'm gonna have to try cooking one on a rock now. You were asking for tips on checking for doneness without being able to see it. The method I use is touch. Even though I'm not blind, it works great everytime. Also, it's handy if you don't know the exact temperature of the cooking surface, because timing your steak isn't reliable if you don't know the temperature. What you go on is the firmness of the steak. As a rule of thumb ( literally) you can bend your index finger to the fat of your palm just below your thumb and the firmness of the muscle there would roughly correspond to rare or medium rare in a steak. If you touch your middle finger to the same spot, that would be about medium. Touch your ring finger to that spot and you'll have medium well, and well done would be your little finger. Once you know what each one feels like, you can poke your steak with your finger about every 30 seconds to 1 minute during the cooking process. Remember to pull the steak off a little sooner before the doneness you prefer is reached. Then wrap it up in tin foil and let rest for about 5 minutes before you cut into it. That will allow it to finish cooking to the doneness you want, and it will retain it's juices better. I hope that helps!

@@johnbrown2163 how i generaly look for free tent camping, is on blm land. i live in new mexico, but im sure theirs some bureau of land management land is out there, check their website or give em a call! . Also when i lived in southern california, most free tent camping is yellow post camping. if you google yellow post camping youll find loads of free spots easily. good luck, and hope you all the best!

Bob Hansler, I know what you're going through, I have the same problems. I lost part of my sight due to surgery in my left eye. Detached Retina and 8 virtual tears in that left eye, doctors only choice was to go through the left side of my Eye. Years later my right eye a blood vessel exploded and a partial detachment. The right eye has a dead spot in it also. The Doctor's only explanations were, for these problems I was born with; bad eyesight, or I worked out at the gym lifting too many weights, in my fourties. I'm 56 now. Then later in life, I had two cataract surgeries. Stay well Bob Hansler I love the videos. I think we are lucky to have had those Doctors to get us through the tough times in our life's, and had the family to help us heal. Prayers for your health Bob; Take care. Patrick S. Phillips P.S. On the meat.. The easy way is on how tight of stiff it feels. Take index finger to thumb thats rare to med rare index to middle med rare to med well
This is feeling the muscle under the thumb. It tightens as you switch fingers. That's how i was taught

its different for everyone and for every cut of steak when testing it with your skin so it's a very inconsistent method, the most consistent way is to check the internal temperature with a meat thermometer.

Yes not always the best way for different cuts of meat. Quality steak which he was cooking it holds out. Also since he's blind in 1 eye & can barely see out of the other feeling his meat for stiffness is his best way. Yes meat thermometer is always best way. Also pull the meat when you think its almost done because the internal temp will rise even after taken off the heat.

As far as being able to tell when your steak is done, there's probably a fancy infrared thermometer that will read the core temp out to ya...
all you have to do is touch it and depending on how firm it is it will tell you how cooked it is

Bob, You do not need great eye-sight to cook your steak.
Cook the steak by the touch method:
Make an OK sign with your forefinger and thumb together. Feel the same flesh pad below your thumb. Gently poke you cooking steak: if it feels about the same firmness as your ok sign, your steak is rare. Next, touch your middle finger to the tip of your thumb. That’s how a medium rare steak feels. Lastly, touch the tip of your ring finger to your thumb. This is what a medium-well will feel like. ps - I tend to cook mine by smell.
Yup yup! My touch isn’t sensitive enough, but I’ve had several folks tell me this. Best method I’ve found? Listen to the spirits of ya ancestors!

Hey, Bob! I noticed a few comments have already touched on how to tell the doneness of your steaks, but I wanted to add that each cut of steak is a bit different of a feel. My favorite is a porterhouse or ribeye, so I have learned how soft and springy I like those cuts (I also like mine more on the rare side). It's something you're going to have to play with until you get it right for you, but I just use my pointer finger and if it 'feels' right, then I know it's done enough for me. If you practice this before the sight's completely gone in the left, you may get to where you can feel that you have the right sear on it too.

I mentioned this in the chat yesterday but I wanted to explain it in more detail.
Hold your hand out, palm up. Poke the base of your hand by the base of the thumb. What does it feel like? If you guessed raw meat, you’re right.
Now, make an OK sign with your hand by touching your forefinger and thumb together. Feel the same part of your hand. It’s a little firmer. This is how meat feels when it’s rare.
You’re now going to move to your other fingers, and as you do, you’ll notice the pad of your hand will get progressively firmer.
Touch your middle finger to the tip of your thumb. That’s how a medium rare steak feels.
Next, touch the tip of your ring finger to your thumb. This is what a medium-well will feel like.
Last but not least, touch your pinky to your thumb. That’s the equivalent of a well-done steak.

Thanks for sharing Mr. Hansler! I used to do computer work for the blind and we used audio tech. Maybe an audio thermometer would help with your steak. Hurts my heart to see this affliction come upon such a great person but you still continue to inspire and teach!

A good tip I learned for telling how well done a steak is is to take your finger and press it against the muscle right around where your thumb meets your palm (on the same hand) This will roughly mimic the consistency/feel you’re looking for in the meat. Index finger feels like a rare steak, middle finger is medium rare, ring finger is medium well, and pinky is well done.

For tips on how to cook steak without visual cues look up the finger trick. Steak at each stage of cooking has a certain texture. If you press your thumb to each of your fingers you'll see that they each have a different amount of give when you press them. Thumb against pointer is supposed to be raw, thumb against middle is rare, thumb against ring is medium, and thumb against pinky is well done. Hope this helps
Yum. I think you can tell the doneness by pressing your finger into the meat. If it springs back, it's medium rare, if it's less springy, more like medium and if it's not springy at all, it's all for Huck (if he'll still eat it. That dog knows what he likes.) To tell where your steak is to your liking you can use your cheek which is rare, your chin is medium rare, your nose is well done. Or set a timer 7 min one side 5 mins on the other side. Should have a line of pink through the center. To stop your steak from over cooking or becoming touch let rest without cutting it for a couple minutes just to let the meat reabsorb the natural juices back into the meat.

@Bob Hansler: in regard to your eyesight and cooking meat , try this tactile method : on your non dominate hand 🤚 hold your thumb to your index finger , then with the other hand touch your palm directly under the thumb . That softness = rare cooked . You hold your thumb to the other digits on the same hand for a more well done steak ( Little finger should be well done) Obviously you need a tool to press the meat you are cooking as comparison . Touch the end of each finger against your thumb end on the same hand and push your thumb muscle with your free pointer finger. Your pointer is rare and your pinky finger is well done. Hope that's helps with your steak cooking

Yeah as someone else said below a great way to tell the doneness of a steak is by the feeling the middle of it. You can tell how done it is by how much give it has. He went into more detail below or look up the tricks online. I've been a cook for years now and the feel is more accurate than anything else. I guess you could also use a thermometer lol but feeling works better
