Tried it! Great recipe. I was nervous to do direct on stove top so I did a double boiler method instead. Didn't have a thermometer so I turned off when it thickened. Perfection!
@@AveryRaassen I will use it on low carb vanilla ice cream. I used one cup swerve to replace the sugar and it works very well into my diet. I am excited.

Hi. Question I tried making this recipe 3 times. I can seem to get past 63c before white lumps start appearing. I have my stove on the lowest setting. Any suggestions?
You could probably beat your eggs together and then strain the eggs. Also, at the very end, the mixture does get passed through a fine sieve to catch any lumps.

@@shonabailey9365 One of the reason I am hesitant in making a Lychee Curd is that there isn't much acid in the fruit to set the egg and lychee on its own is flavourful but paired with butter and egg, I feel like we will loose the freshness due to the eggyness and fatty-ness from the butter. Thing like lemon, calamansi, kiwi and other citrus or heavy flavoured fruit will work. In terms of pectin, I would go with the recommended pectin instruction. I will need to experiment and hopefully get back to you.

I followed this recipe for a lychee curd and it was too watery-it didn't set.🙃
Now there is an idea I need to try. You might need to use lychee flavouring instead of juice or fruit.
