ROASTED CHICKPEAS THREE WAYS
Prep Time: 15 minutes
Cook Time: 45 minutes
Total Time; 1 HOUR, 15 minutes (including time to cool)

LEMON PEPPER & GARLIC
1 15 ounce can Chickpeas (Garbanzo beans), drained & dried
½ teaspoon Lemon Pepper Seasoning, salt free
¼ teaspoon Garlic powder
Pinch of Salt
Olive Oil - a drizzle
SMOKEY MIDDLE EASTERN
1 15 ounce can Chickpeas (Garbanzo beans), drained & dried
1 Teaspoon Za'atar Seasoning
½ teaspoon powdered Smoke seasoning
Pinch of Salt
Olive Oil - a drizzle
CINNAMON TRAIL MIX
1 15 ounce can Chickpeas (Garbanzo beans), drained & dried
½ cup Cashews
¼ cup Dried Cranberries
¼ teaspoon Ground Cinnamon
⅛ teaspoon Ground Clove
1 tablespoon Truvia Sweetener
Vegetable Oil - a drizzle
INSTRUCTIONS
Preheat oven to 375° Fahrenheit
Drain and fully dry the canned Chickpeas with a lint free kitchen towel. Gently roll the chickpeas between the towel to remove any loose skins.
Toss the chickpeas and seasonings with the appropriate oil in a bowl and then place them on a parchment lined cookie sheet and roast in the oven for 45 - 50 minutes.
For the trail mix recipe, follow the same procedure, but roast in the oven for 45 minutes, then add the cashews to the tray and toast for another 5 minutes. Remove from the oven to cool. Once cooled, add dried cranberries.
Enjoy for up 3 days stored at room temperature in an airtight container.
