I did run it again with no change to the texture. I discovered that only the pecan nut was chewey, it was like a candied carmalized pecan. Another great one I will try soon. Found out one thing about using the tray covers as drying trays, it takes much longer to dry. I put some baked sweet potatoes in the tray lid and it took 4 hours longer than the ones in the stainless-steel trays. Thanks again for the great video!

No, The vacuum chamber is only for the candy. It is not safe for any perishable food. The videos I did with the chamber is a way to heat the candy so that it will puff up under vacuum ONLY. This recipe (and all other of my videos) must be done in a freeze dryer!
