  • This sweet dosa is a popular traditional dosa from the Konkani cuisine. It is called as “surnali” in Konkani. This sweet dosa is prepared by almost every GSB households on the occasion of Uthana dwadashi which is also the day of tulasi pooja during diwali.
    Sweet dosa is served with ghee or dollop of butter and it tastes great like any other dosa’s. Do give this recipe a try and let us know your feedback in comments.

    This one is Towsoli. One witout any vegetable such as cucumber is called Surnali. Towse is cucumber in Konkani. So it is called Towsoli, when cucumber is added. Good description and video. Thanks.

    In the Konkani community, we add some poha while grinding the batter. The poha will make the batter easily fermented and the dosa will also become fluppy.

    We usually make this, nd it’s very tasty.
    I add Jaggery next day while making dosa cos sometimes it becomes too sour, so it’s better to add next day to get the perfect sweetness.
    U can also make methi dosa by adding more methi seeds in it, skip cucumber.
    Add coconut, flattened rice and 1tbsp methi seeds.

    Excellent Interesting recipe. Can we make without fermentation? I feel sweetness in fermented batter will not be that much nice.Sour taste will be there know?

      Without fermentation the dosa will not be fluffy and the taste will not be good. Even after fermentation you will not feel much sourness due to the presence of jaggery in more quantities.

      Adding salt before fermentation helps batter fermenting fast.

      You can use Madras cucumber, Ash gourd.....you can even skip veggies and prepare plain sweet dosa.

    In this video, you have not used any buttermilk. Does the batter ferment as much as required without it?

      I have not used because of sufficient liquid present in cucumber+ jaggery.... In this case I have fermented batter for 12 hours.

      There is a s rice, jaggery & coconut, it will ferment on its own.
      1. If you are in a cold country you can wrap a thick towel around the vessel and put it in the oven and turn on the oven light and leave it for fermentation for 12 hours.
      2. wrap a blanket and place it in a corner and cover the vessel with a big bucket.
      3. The last option and least advisable is adding 1 TSP of active dry yeast and covering the vessel and putting it in the oven and turning the light on or wrap with a blanket and covering the whole thing with a towel.
      The idea is providing warmth which in India is easy probably slightly problematic in India’s so called winter.

      This dosa do not require any accompaniment.... traditionally it is served with a dollop of butter or drizzled with ghee on top of the dosa.

    When there is natural fermentation what is the necessity of adding baking soda?

      When jaggery is added to the batter, even if we allow it to ferment for 12 hours it do not rise well in volume as well as do not turn slightly sour like other dosa batter. Adding soda is not compulsory. It can be added in case of above mentioned reason.

      Dosa rice is a medium sized variety raw white rice used for preparing dosa batter. In grocery shops if you ask dosa rice they will give.

      Here we say idli/dosa rice.....for your understanding dosa rice will be similar to Sona masuri rice but slightly thicker in size.

      In my home we call tousali for muddo / cake kind of dish prepared from cucumber.... N for plain sweet dosa it is surnali...when cucumber /mangalore cucumber/ ashgourd is added to the same batter it is taushe surnali, magge surnali, kuvale surnali...

      I didn't understand your first statement. Sodium bicarbonate that is baking soda/cooking soda is one and the same. Where as baking powder is different with the addition of cream of tartar and cornstarch.
