Don’t spend more on storage. You can get external drives for much cheaper than Apple charges for internal upgrade. And like you said, you don’t need it anyway. Go for more ram. Might as well future proof that. Nano texture is great. Reduces a lot of glare. But if you don’t get it you won’t miss it. As a pc guy, I’d strongly recommend the Logitech MX 3S for Mac over the Apple Magic Mouse. It’s ergonomic, well built, precise, has silent clicks, horizontal scroll, and customizable buttons. You don’t need lightning cables. The MacBook uses usb-c/thunderbolt 4. If you get the M4 Pro or Max models, they’ll be thunderbolt 5. What that would potentially mean for you is incredibly fast data transfer speeds assuming whatever hardware accessories you’re using supports it. Or multiple 8k displays if you’re into that. Otherwise, for normal stuff you just need good usb-c cables.

I don’t recommend the Magic Mouse, especially as you’re editing in DaVinci Resolve. Have the centre click-wheel is essential in Resolve, especially in the colour page for applying grades and settings quickly. You can’t do that with the Magic Mouse. I use the Logitech MX Master 3S for Mac and it’s awesome.
In case you don't know, Davinci Resolve lets you render on a remote machine. I use my laptop for basic editing, and then render on my workstation remotely from my laptop.
I love my Magic Mouse. With that being said,going from windows to a Mac is a learning curve. Best together a two button mouse while you’re learning the system.

Final Cut Pro is also natively supported on Mac, and they are the most optimized for video encoding using Compressor.
I am skipping this year's double points, and I even told my mom the only gift I wanted was the Lego delivery truck but she wasn't having it so I am finally getting the chance to get the petshop modular 13 years later this Christmas which for me is great as my first job after high school was a pet store for 3 years. I could have gone for the Orient Express, but I want to get that from the Lego store next year since trains have been my favorite things outside the modulars for years and the Orient express will finish half of my bedroom once I get it. Though right now, I have too many projects to want to get it even for Christmas or double points.

I hate snow when it's become slushy and then if it doesn't melt the same day it comes out, it refreezes over night, and I've always been weary of it from a time when I slipped and had a leg injury from it for months. The real problem though is concreate and tarmac - they might stop towns from being muddy in winter, but they make the ice worse.

Maybe try to setup Google Remote Desktop and try that out. Then you don't need two expensive editing devices. Just one cheap device where you transfer your video's to the cloud like onedrive or dropbox and then with google remote desktop take control of your computer at the studio and render and edit the video's there. Depending on size of file it could take a while to upload your files so that's not always be the best solution for when you are on the road. But at home it will be manageable

As for accessories do not get hung on lightning 5. That’s the newest spec and its benefits are for faster data transfer. You can get USB c lightning 4 with no issues. Lastly do not get the Magic Mouse. Its charging port is on the bottom and it’s not ergonomic. This is all coming from someone who has Mac for 25 years.
Definitely take the time to learn MacOS. Learn why most creators choose Mac’s over pcs. Truthfully, you don’t need to special order one. The one they have available at the store is plenty powerful.
