Baekseolgi cake
1. Place baking cups on the iron plate.
2. Add vanilla extract to the egg whites, beat well with a hand mixer, and add some foam.
3. Add sugar (90g) to the egg whites in 3 batches and whip until the meringue is hard but the horns are slightly curved like a bird's beak (when the foam rises to some extent, add the first sugar and whip/when the line passing through the whisk becomes clear, add the second sugar and whip/ When the area where the whipper passed is fluffy, add the third sugar and whip)
4. Remove bubbles at low speed.
5. Mix salt with the sifted rice flour and corn starch, sift again and mix (be careful not to break the meringue).
6. Once the powder is mixed to some extent, add grape seed oil and milk and mix carefully.
7. Put the dough in a piping bag and pipe it into a baking cup.
8. Bang the iron plate on the floor.
9. Add red bean paste for topping.
10. Place a dishtowel on a large griddle and place the griddle containing the baking cups on it.
11. Pour hot water
12. Bake in an oven preheated to 170 degrees for about 4 minutes, then lower the temperature to 140 degrees and bake for another 16-17 minutes. (After baking for 4 minutes at 170 degrees, place a griddle on top to prevent browning).
Makes 12-13 Baekseolgi cakes
150g egg whites
Vanilla extract 3g
104g sugar
1g salt
104g white rice flour for confectionery
11g corn starch
35g grape seed oil
58g milk
Appropriate amount of red bean paste
(for topping)
