If you have to use shims then I prefer Composite. We were forced to use shims for over 20 years because the ez-level system did not exist then. We hated every minute of it and spent 3 years developing that system for that reason.
you would be forced to use a leveling system like the EZ-Levels. Otherwise you would be stacking shims on top of one another. Not a good foundation. I've also scribed cabinets to accommodate for the slope... but the labor costs are as much as a decent leveling system so no need anymore.
