@Abigail Whitall She's playing an "erhu" which is a Chinese instrument. The closest thing to this instrument in Japan is the "kokyū". The "ehru" is one of the most iconic Chinese instrument along with the "Guzheng". With Mihoyo being a Chinese company and Liyue being a representation of China, the Zhongli theme and other Liyue themes are inspired by traditional Chinese music and would be ridiculous to think this is a Japanese instrument. With the release of Inazuma, they might use some classic Japanese instruments to represent the sounds of Japan.
Don't even play genshin impact but man, this is so good and enjoyable to the ears. Just started learning about this instrument and listening to the music it creates, truly an instrument in it's own type of class.
I grew up in the Midwest so I didn't hear Erhu music as a kid. But listening to it a lot as an adult because of this game gave me an appreciation of it. I don't know what it is, it brings me to tears. It's such a beautiful sound I get emotional every time.

I play violin and I’ve always wanted to play this instrument. It looks so complex but it sounds so beautiful.
Playing the erhu is a bit difficult, because it has only two strings and without strings on the fingerboard.
But it relaxes me.☺️
