In this video you will see how blacksmiths make a Taiwanese Tuna Cutting Knife from an old scrape.
We decide to make this knife because one of our beloved subscriber in USA had suggested us to forge one and he also wanted us to send it to the states for him. We are so happy that he loves our handwork and wants a knife from us. But, we are so sorry that we cannot send to him as we live in a rural area and we have never ship items abroad, we don’t have experience in that work at all.
We did not have any idea about how it look before his suggestion. After searching for the image, we found it is a beautiful and very easy to make.

Fantastic work. I love watching videos by knife enthusiasts extolling the virtues of only certain grade whetstones and premium exotic steels and then this guy makes the best knife you have ever seen from a leaf spring and sharpens it on a wet brick.

There were Blade smiths around long before 2x72 grinders were even a thought. To be honest, the whole stock removal process is a relatively new consumer concept, mainly designed to sell equipment. Knives have been around along time and some of the very, very best are 100's to thousands of years old. Some process has been lost forever, as in true Damascus. Personally I think he did an excellent job with resources that were available. That's a true crafsman.
I learnt more from that video that any other blacksmith on UA-cam

Really nice can you tell me why you temper the blade so shallow only on the very edge, why don't you go up a little higher?
ive always loved the blade profile on these things. you cant find a curve like that on western chefs knives, the blades are way shallower, and they lack the rounded heel, which i like less. really need to get one of these proper for my house someday

This is the first time I've seen a water quench like that before. The blacksmith ran the edge of the blade into the water after the heat treatment several times. I imagine this hardens the edge, while the rest of the blade steel (it's a mono-steel knife) remains more ductile. I'd like to know how effective this actually is? It was a very interesting video. It seems like a lot of 3rd world smiths are using leaf springs for knives, the finished blade winds up with an HRC of 55-59. Some people love these knives, others don't. So far the most famous seem to be the ones coming out of Vietnam (Daovua Knives).
I wanna know how the blade stays in the handle.

It amazes me how well you use the inclined stick in your water trough to control the depth of hardening and tempering on your blade edges. I have never seen that before watching your videos. I might have to try that sometime on water hardening steel blades.

With the metal bolster he uses you don’t need a pin. The metal compresses the wood and grabs the tang.

They're Cambodian, but they're part of the one of the Muslim minorities. Asian countries aren't homogeneous ethnic states...

Because he has been quenching in water for almost 20 years and this is the best technique. He has tried a few different techniques already, quenching in oil and salt water.
