You may not remember, I’ve commented a few times. Your no churn ice cream recipe started my son on creating an ice cream business years ago as a boy. Your (and others’) baking videos have inspired him and helped him narrow his life focus to owning a bakery one day. He’s currently at Art Institute of Dallas in the baking and pastry program. The irony is that these past couple of weeks we’ve been discussing his desire to create a croquembouche… and suddenly, here’s your video about it! Coincidence? Maybe. Lol. I just want you to know that you’re making a big impact. We started watching you when you first came to UA-cam years ago and he was a little boy. Now he’s a real baker in the making. Thank you ❤
Thank you for sharing this. It reminds me why we started Bigger Bolder Baking years ago. We really just wanted bakers to gain confidence by making the process easier for bakers to follow. I celebrate each success that bakers share, and hope that it inspires others to make their own baking success story. I wish your son all the best in his endeavors. Happy Holidays to you!
Wowww that’s amazing I also started baking after watching Gemma’s recipe of scones and whatever I’ve made everyone like wowww this is so good Thanks gem and happy holidays ❤
Can we just appreciate Gemma’s hard work? She even replies to all her comments. She is so sweet and polite. Unlike a lot of other UA-camrs. Love her.❤❤❤
You are very welcome and also a thank you to you Gemma for all your wonderful recipes and your lovely personality. Along with Kevin and George this has been a nice experience and let's not forget the adorable Waffles. ❤
Until this video, I had no idea how my late friend made her delicious cream puffs. I think I know now. But she stopped before the caramel part. She's been gone quite a while, but watching this, I could still taste them.

Very nice recipie Gemma! They looks amazing! Merry Christmas and Happy New Year to you and your family! Have a nice day and good weekend! Have a good week! 👍👏🤩🤩🎄☃️❄️
Merry Christmas to you, your family and team! An amazing year it’s been, hopefully 2024 is bigger and better for us all! You croquembouche looks impressive!
Wow this video was amazing thank you for you're beautiful way of demonstration you are really a fantastic brilliant teacher and congratulations on another cook book
@@biggerbolderbaking it took nearly all day, but my croquembouche turned out beautifully! I’m not sure how to insert a picture or I would certainly include it! Your step by step instructions were fantastic! I do have one question… how does one serve it? Once the caramel hardened, I couldn’t pull the pieces apart.
Could you please create some diabetic friendly recipes? I absolutely LOVE your channel! My son was recently diagnosed with type 1 diabetes and for the first time I've had to reconsider having a cake for Christmas. It's Christmas! It's a birthday celebration and now no cake? Help! Thank you so much.
I can’t promise, but I do feature some from time to time, whenever possible. I only put out recipes that I’ve tried and tested . I have invited some chefs who are more experienced in coming up with recipes that are considered healthier options.
@@biggerbolderbaking thank you. It's a whole new world for us. Reading labels, trying to figure out if this product will work for what we need. Type 1.5 presents as a one but insulin resistant like a 2. I LOVE BAKING! Nothing says love and welcome home like something fresh baked. Could you please point me to chef's with healthier options. One day my son was fine, 6 months ago not even a prediabetic, then one day he was extremely thirsty, drinking gallon's of water a day, lost 35 pounds in a month, he had been in ketoacidosis for two months... it's a miracle he's here. No matter what age they are you still try to take the best care of them no matter how old they are. Thank you for responding. I knew it might be a long shot. I don't even know if there's a healthier sugar option that will caramelize? If only I didn't LOVE baking so much!!! 😭
I'm American and I never tried this sort of dessert before, unfortunately. It looks so delicious. I'll bet the croquembouche is almost like a tower of creme brulee donuts drizzled with caramel.
Love your recipes. I would love to have the recipes in grams for specific weights to be more precise. Also internal finished cooking temperatures would avoid over cooking and would be brilliant
Great as usual. Please I’m fascinated with that tap thing on the wall above your stove. When you showed us yr kitchen it wasn’t mentioned. I’ve just got to ask, never seen anything like it. Many blessings this Christmas 🎅🌲🎄🥂Sarah
Love your content! Thank you for such great advice. I live in Las Vegas and CAN NOT find a bakery that will make a traditional Russian Honey Cake. Will you please show us how to make that. Another idea is a coffee caramel cake with caramel icing; as I have not been able to find those since my tour in Iraq. If not those then perhaps a simple butter cake. Thank you again for your amazing videos, they are helpful and fresh.
Hi Laura. I don’t have one at the moment, but I do have a Pear and Honey Cake recipe, www.biggerbolderbaking.com/warm-pear-and-honey-cake/ Hope you like it!

Fabulous demonstration... thank you. For next year, would you consider presenting a few recipes that are egg, dairy and gluten free? I know that this is a big ask. I really want to have a few recipes that I can bake for my almost 3 year old grand niece who was born around the same time as your little guy. I hope to be back in Ireland during the summer and I want to spoil her. Merry Christmas and a Happy New Year to you and yours. Go dte tu slan!

The weight of eggs in recipes is equivalent to their liquid volume,, hence you can assume the weight does not include the shells. Hope this helps.
