Gemma when you employed these 2,you Struck Gold. From start to finish they explained everything step by step, all the Pro`s and Con`s of What could go Wrong, and What to do if thing`s go Wrong. Loved this video, :-) I Love Profiterole`s and eclair`s. The Tower looked amazing. :-)
Not exactly, I messed up the choux, the cream and the caramel itself. Not one of these possible problems mentioned. The choux had no room to fill, their bottom came up with their top and resembled a muschroom head, the cream was too loose as the guy said do not whip too much, and the caramel crystalized twice. We ate the filled choux cos I ran out of patience. After 3 years and retrying, same problems occured....
Jemma well done. 🎉👍First time bake that’s turned out amazing! 🥇🏆Can be tricky baking with bananas. Plus using an alternative pan. But you were up for it. Good experiment. After all it’s a live kitchen and home baking! Thanks for sharing appreciated. I might add that book to my Christmas list!👍👍👩🍳

Is there any variation that makes the tower stay stable and crunchy for longer? I want to make this before the party so I can host and take pictures of the whole spread. is it going to deteriorate so much in 6 hours that all my hard work will just be a soggyembouche?

In Canada we call the little round segments “cream puffs”. DIY hack: you can buy them pre-done in frozen containers at Costco. They are smaller size so your tower won’t be as large. You can then assemble with any type of sticky “syrup” you choose. I had one that was fantastic with maple. Some specialty italian bakeries will also make them esp for weddings.

Can you make these in advance fill them with the cream filling then freeze them & take them out on the day you need it to assemble? I want to make this for an event but working full time I won’t have time so asking if I can these a week in advance then freeze?
