  • Pot Barley is healthy for you and a great variation to a fried rice. It’s tossed with sausage, bacon, chicken, potato, peppers and spinach and finished off with some soya sauce for that umami boost.

    Ingredients
    2 1/2 cups Pot Barley, soaked overnight and drained very well
    1 potato diced in very small cubes
    1 red onion finely chopped
    3 - 4 sausages cut in small cubes
    3 -4 rashers of bacon(I used Turkey) cut fine
    1 green pepper cut into small dice
    1 cup left over cooked chicken cut into small dice
    2 cups fresh spinach roughly chopped
    Salt
    3 - 4 tbsps light soya sauce
    Olive oil
    Process
    In a large non stick sauté pan, heat some Olive oil and cook the potatoes first till golden brown
    Add the onion and sauté till golden brown and follow with the sausage and bacon
    Add the cooked chicken and green pepper
    Cook for without stirring about 3 - 4 minutes at a time so the ingredients get a nice dark colour at the bottom
    Depending on the size of your sauté pan, either take everything out to sauté the barley or make a well in the centre and let the barley caramelize a little bit
    Mix together well and add the spinach which will wilt and cook in a few minutes
    Add the soya, toss and serve!

      Zehra Khoja you can also make hundreds of casseroles featuring barley and some of the Savory casseroles are also good for breakfast! Being vegan I need to get protein at every meal and sometimes I get tired of oats or soy and make up a barley baked porridge or mushroom and onion barley bake. :-)

    I have got a jar of pearl barley sitting on my pantry shelf and I have no idea what to do with it till I saw your video. Gonna give this a try. I’m slowly substituting jasmine rice with brown rice and barley since jasmine rice makes me so bloated

      It was! It started out as fried rice but I didn't have enough leftover rice so I cooked up some barley to add to it and it was terrific. I too loved using it for something other than soup!

    I just made this thing for breakfast: super. One important thing I've learned from this recipe was to caramelize the barley a bit. I'd never tried before, and its very tasty. A great nuance!

      Hey Saurabh, you can just omit the meat, no substitution necessary ... maybe bump up the veggies? You can really personalize it!

      Tofu, or fermented tofu. The latter is somewhat firm, and has a (vaguely) similar texture (to meat).

    Fantastic! I also soak everything -- it shortens cooking time and you don't have to watch it while it's soaking (unlike during the cooking). I also add celery everywhere, and drizzle a tiny bit of toasted sesame oil over it when it's ready. It's not a "healthy" oil, but I like the taste, and a little bit won't kill ya! Lol. Oh yeah, and sunflower seeds. Don't cook them, of course. P.S. if you wanna get really scientific and make it a complete-protein meal, combine the barley with some lentils or mung beans. They are easy to cook, and are ready faster than barley, about as fast as , say, rice would be.

      Also, with onions: I like to cook some and use some raw. So a keep like one third of my chopped onions and add them to the ready dish. It works with "dry" food. If it's liquid, they become soggy and there's no point, but this thing here is fine to add raw onions to.

      +thanks! Bramble Q123 I'm not a fan of raw onions. Soaking them in water reduces their intense flavor

      I know people who simply don't tolerate them. But, onions is one of those foods WNO lose nutritional value somewhat if cooked. They're still good for you, but not nearly as much as if eaten raw. Course, they taste very different too, raw and cooked. I lime fried onions because they get soft, slightly caramelized, drenched in oil and soy sauce: this is very savoury! Raw onions, otoh, are more healthful, sharper in taste (though less savoury), and add a nice crunch to the meal. That's why I use both on the same dish -- it's like two different products! Celery too, although its very bland raw, adds taste and crunch to cooked dishes. It is, however, also more nutritious raw. Carrots, otoh, are o er ten times more nutritious when cooked.

    All they had at the store was Roasted Barley, so when I was ready to cook it, Ivfound on the back that it was for TEA! Can I cook it and eat this kind?

      @@KravingsFoodAdventures instructions were to bring to a boil then remove from stove to steep for 10 minutes before drinking.

      Kravings you assumed that she was asking due to her name something Islamic. I am vegan and my real first name is Hajar along with a married name of Ayaou. Those are Moroccan names and Morocco is an Islamic country but I would be asking as I am vegan. So for other vegans you can use Liquid Smoke and other crumbled or cubed tofu that has been marinated or plain you could also use TVP or small pieces of tempeh. All along with some liquid smoke.

    I tried this, it was like kids food, dont want to make it again...also 2.5 cups of barley is way too much...its very heavy so this batch will sit in the freezer too long
    I think 1 cup would also be too much for a young couple who typically eat the same meal twice. Im just disappointed by the sheer volume of this batch that i made using exact amounts from the recipe.

      I’m sorry you didn’t like it. I’ve made it often and it’s never been too much. In saying it’s like kids food you may be right, kids love it as it looks like a fried rice. It is a complex carb and good for both kids and adults.

    We feed dogs barley. I could not serve it to my guests since barley is considered pesants food.

      Never heard of Chicken or Turkey bacon? It’s made to look like regular bacon, but a lot healthier. You can also use regular bacon.
