    1 head of escarole, diced small
    16 oz of small pasta, she said pastina
    Pecorino Romano Cheese (I used Parm)

    I’m Italian and my Mom made escarole and pasta but she sautéed the escarole in garlic and olive oil. Then she adds cannellini beans and pasta. I guess it’s just another peasant variation.

    I'm still walking to get my groceries, get my laundry done, and to my Dr's appointments, and 3x a week I have to walk to get my prescriptions, I'm bless everyday cause my Lord is always here with me, so I don't sweat it....I @ times wash my laundry in the bath tub, is amazing!!!

    Hi Brooke! I love Clara too. I just want to say that even though that was labeled as escarole, it wasn’t escarole. I think someone in the store messed up. Escarole leaves are loose and wavy and much greener. I live in an area of the country with a large Italian population so it’s an item that is readily available here. Maybe you can get some seeds and grow a few in your garden this year as an experiment. ❤

    This is very similar to haluski. My mom saved bacon grease and would season it with bacon grease when we couldn’t afford the bacon. It was my favorite comfort meal.

    The great thing about a mildly flavored dish is you can put your own spin on it and it will be palatable by the majority. Thinking about the Great Depression, they didn’t have the commodities to add so they did what they could with what they had. I agree that would be great with chicken, or even sliced sausage, or bacon crumbles, any diced meats left over from another meal. I really need to buy her cook book! Thanks Brooke for supporting Clara’s efforts!

      I went to the library and borrowed her book 😊 read it cover to cover marking the recipes I wanted to try. Wrote down the ones I liked most 😊free enjoyment of her book and recipes. I might go an check it out again for fun ❤

    Escarole is tougher, and very dark green, but any greens will work. Love that you are featuring Clara! I have that book!

    I had to walk to the grocery store and get groceries to feed my family of 4, I learned the hard way to make meals that had leftovers,as much as I possibly could carry without killing me.Getting home and feeling like you just want to fall in the bed, but can't because I had to feed my family,the grocery store was probably 3 miles but walking there and back with a load of groceries, really wears you out.I was so happy when we were able to buy a vehicle.

    Hi Brooke. My hubby walks 11 kilometers to and from work everyday. We don't have transport, busy saving. He is so fit and has lost weight😂. Been walking 3 years now I love watching your channel, you are always so upbeat, you make my day brighter

    When I was a kid in the 1950's, we had two grocery stores (one large, one literally mom and pop) within 3 blocks of my home. The closest nowdays is close to a mile away.

    I have always added salt to the water when boiling my pasta.Italians always say the water should taste like the sea. Without salt in the water, the pasta tastes rather flat.

    Most escarole is called endive in stores now days. It's from the chicory family. Its a bitter green. Great video

    To amp up the escarole
    Brown some pork neck bones, onions, Italian sausage broke up out of the casing and let brown then once cooked well add chicken stock and let cook for about 2 hours Cut up the escarole in smaller pieces and add a can of cannellini or northern Illinois beans This is a great soup for when it’s cold

    Hi Brooke😊 you should try making your own laundry detergent. It’s really easy and saves so much money. I put baking soda in the oven or wood stove on low for a few hours to cook the moisture out. It makes washing soda. Then grate up your favorite bar soap. It’s 2 parts washing soda to 1 part grated soap. Use 2-3 tablespoons per load. I’ve been doing this for years and it works as well as any store bought hyper allergenic laundry soap. Try it. You won’t regret it.

      PS.I use dove soap. We have very sensitive skin and a septic system so it works great.

    I have tried to cook the past few years with zero waste: there are always a few outside lettuce leaves that get a bit wilted (romaine, curly, etc)...if I cannot revive them for salad, instead of throwing them away, I wash them, chop them up and add them to whatever hot plate I am cooking (stew, soup, pasta, eggs, etc)...they are just a cooked green veggie and tasty and it does not matter that they were wilted before they were cooked...this way, I have less waste and I eat more greens...dts/usa

    Sorry that's not escarole, that's romaine hearts, escarole when it's fluffed out looks like a green tarantula with thick legs, curly endive(Not Belgian Endive!) looks like green tarantula with thinner legs with numbies( unshaved legs?) I will try to find pics of the real deal! My grandparents grew and sold produce for almost 70 years in "The Olde North Market" in downtown Columbus Ohio, Spinach would be the closest in taste. If you've ever had Italian Wedding Soup( Chicken Soup with small meatballs in it and Acini De Pepe`( little dots pasta) or pastina( tiny dots pasta), uses escarole, curly endive or spinach as the greens in it. It's basically Italian chicken noodle soup with greens and meatballs in it. It's called wedding soup because it's normally served at large Italian Weddings, but mostly because as it cooks the flavors"marry" each other& it usually has Pecorino Romano Cheese in the broth, also egg in the broth makes it a very rich broth( you have to temper" the eggs into the broth, you don't want scrambled eggs to n the broth. I'm Italian and I also sold produce with our family for about 22 years. I'm hoping I can find pictures to show you what they each look like! ( But I'm tech challenged so may not be able to put on here!) 😉🥰

    you have to wait for the water to boil for the greens to go in bc you are just blanching them. You cooked all of the nutrients out by letting them sit in the hot water for so long bestie. xoxo

    I watched all her videos and was so hurt to find out she had passed. Her family and the rest of us are lucky to have her videos and stories from the Depression.
    I use earth breeze, too. I still add baking soda to my wash to get rid of odors. I learned to add a 1/4 cup of baking soda to my laundry when my boys were little. It takes 'little boy smells' out of the laundry! 🙂🙂🙂

    I love depression cooking as well! Let these themed videos comin' ❤I guess everyone needs cheap and filling recipes forever. And I also love weird not everyday recipes just like this one! It is interesting, but Pecorino Romano is cheaper here in Central Europe than Parmesan even though I live quite close to Italy. I always substitute Parmeggiano Reggiano with that, or Grana Padano is also good and even cheaper.

    It's a similar dish to italian cucina povera (poor kitchen) in Bari (south) area. You blanche up brocollini leaves, then you add pasta (orechietti) to cook in that water together with brocollini, then you drain it and add it to pan where you melted 5 enchovies in heated olive oil. (It's just salty, you don't feel the fish.) Then you mix pasta to that and it is suppose to be soo good. I am pretty sure this recipe is the cousin. 😀

    My mom made fried cucumbers every summer. Almost like fried green tomatoes, but better 😊. I’m not a fan of fried green tomatoes, but love fried cukes. We would have buttered white bread with them. They were so good. Good memories ❤️

    I'm 66, retired, and feel like we are in a depression. I have trouble spending less than $50 a week on groceries. The local Dollar Tree doesn't carry that much. Even Walmart is not cheap. The only other store is Harp's Grocery and they are really expensive. I live in Bentonville, AR., the corporate office of Walmart.

    I have had that tiny pasta before. I did boil mine in chicken broth and put bits of chicken in it. It was quite tasty and like a comfort food. I may have also put tiny bits of cooked carrot and onion. ☺️

    😊Brook, I have been watching you for a couple weeks now, binge watching, I am recovering from foot surgery. I love to cook, and try new things. Last night I made your chicken breast with mushroom soup and BBQ sauce. I was cooking for one and there was all that sauce, so I added a can of low sodium, drained and rinsed cannellini beans. I did mine in the crockpot, low and slow. It was awesome! Next time I make it, I will use Campbell’s Cream of bacon soup, and add a sliced onion for taste and texture. No beans this time, instead I will serve it over a baked potato. Have you tried Cream of Bacon soup yet? It adds another layer of taste! I have been using it in place of cream of mushroom in several recipes and it is GOOD! It is pricier but totally worth it. They had Campbell’s soups on sale for $1.29 so I bought several cans. I have tried it in several recipes and been really impressed with it. Your green bean casserole could have a debut with it. I have been so impressed with your family, especially the boys. It is such a pleasure to see them give you real honest and true feedback on your cooking. They are always polite and what a reflection of the person you and Dusty are. Good job parenting! I hope we will see them learning to cook more and more. Maybe once a month you will help them plan a meal, shop for what they need, and let them make it. If they have questions they can ask for help. I think it is an important skill many men don’t have. Love your show,

I learned something new and all though this wouldn't be for me (I'm not someone that enjoys butter noodles).I always and I mean always enjoy your videos. I really like this series too.     Thanks for sharing! I also love Claire and have her cookbook. I think the grocery messed up, that was not escarole. I often make Escarole and Mini Meatball soup. Google what escarole looks like. I am lucky and live in NY and escarole is always available. Ditalini would also work in your recipe. I would love to send you my recipe, let me know and I will send to you. It is yummy and easy.

    Cook both in chicken broth to gather. When partial cook put canned chicken in it then finish with the cheese

    Did your mamaw make haluska (butter noodles and cabbage)? Maybe that’s what it reminded you of?
    For Clara’s recipe, I think I would add in some onion and garlic, myself, just for that something extra. Like others said, I think that veg was mislabelled. That looks like an endive (escarole is from the endive family but has looser, wavy leaves). If it was an endive, it’s close. 🤷‍♀️ I love Clara’s simple cooking. I don’t think the custard tarts will turn out quite as you expect. Milk was different back then - direct from the cow with cream on the top. Try a different desert and I think you will have more success.

    Clara has some great recipes and stories in that book. Another good one is: "Little Heathens: Hard Times and High Spirits on an Iowa Farm During the Great Depression". Try the apple cake in Little Heathens-it is so good and so easy!

      Uh...escarole is a lettuce type veg...however escargo (escargot) are snails...
