Couldn't agree with you more! I'll have to try making Galunggong fish sometime. The only thing I've paired it with myself is Filipino BBQ pork, which itself is to die for and I can't wait to do an episode on it as soon as the 10ft of snow is gone from my back yard lol.
They have a decent amount of flavour and would make a really close substitute for mashed potatoes. They're fairly close to lentils if you've ever had them. Trying new things is awesome! 😀
