I am an AZ deer and elk hunter and have cooked a lot of those animals' meat. This is THE BEST game meat preparation I have ever seen. Hat off to ya, Senor Chud - que rico!!
Love venison recipes!!! Keep ‘em coming! It’s the primary protein in our home so I’m always looking forward to new ways to prep. As always, you da real MVP.
Fantastic recipe! I will have to give this a try. My kids and grandchildren keep me in venison. I'm always making jerky, summer sausage, link sausages, and of course venison chili...but I've never made BBQ out of it and you made this look absolutely delicious! Thank you for sharing this fantastic recipe!
Venison barbacoa is my go to. I love making tacos, enchiladas, tostadas and nachos from all the shoulder meat. Blending in adobo chilis with pepperoncini brine during the sous vide bath is a must. Your sandwich looked amazing. Great content like usual :)
Absolutely epic way to prepare venison. I love it, will copy this recipe, and me and my family say thank you!!! I don't often say it for a UA-cam video, but really nice job on this! Hoping this gets shared a lot. 👍
Game meat and smoky BBQ are a match made in heaven. I smoked a venison shoulder a few weeks ago on my Weber using a mix of apple & hickory with my charcoal, then made it into a stew with some beef broth, red wine, and butter, along with some veggies. One of the best things I’ve ever cooked and it makes me wish venison wasn’t so expensive 😔
Great Video. I have been a Deer hunter for 45 years. I have had my share of Venison meat for many years. Unfortunately I have not had any in 10+ years. I still do hunt and take a deer or two almost every year. Had two or three bad experiences with it 10+ years ago. Once was someone had cooked up some bad meat and a bunch of us got sick and the other times was just poor preparation and was very very gamey tasting. I will still try it today but the flash back is brutal.!!! This one may be the one.
That looks amazing. One of the best BBQ bites I've ever had was a smoked pulled elk shoulder slider at the now-defunct Campfire BBQ in Seattle, and I imagine yours cooked with the tallow is similar since Stefan basted his meat with drippings from the beef ribs cooking on the rack above.
Brad, can I call you Brad? 😉 I have never been more impressed by anyone doing a " cooking, smoking or otherwise" food channel ever. You have help me expand my skills alot. Keep it up your awesome.🍻
Just got done smoking my first venison ham. It’s amazing! I brined it for 6 days and it was an all day smoke. Removing the bone today and putting it on the slicer!
Venison does great stewed. Venison birria and chili Colorado are two of my favorites. Maybe a homemade, smoked chilis video is in order. One way to cut down on gaminess is get the deer field dressed quickly and get it chilled fast.
As a deer hunter here in the mitten state, I have a bunch of deer shank that I usually pressure cook. Going to try this instead. Looks like an awesome recipe. Thanks.
I don't like deer, but after watching this video... changing my mind! Got a smoker check! Got a sous vide set up check! Got a Kitchenaid check! Everything else from the store!
Bought a small farm and this was our first full deer season in Alabama. We harvested a couple of deer and I’m always looking for new recipes. This is definitely going on the list. What episode has the full bun making recipe?
Bradly, you are an amazing talent. Keep cookin' things, outside. Love the effortless, oh by-the-way, scratch buns. Reminds me of the Eggs Benedict video a year or so ago during the holidays, when again you effortlessly knocked out the scratch English muffins.......
Great vid! Thanks Brad! What kind of dough conditioner do you use and does it make much difference? I know potassium bromate is banned over here in the UK and EU.
Hello from Canada Bradley Awesome tasty forest creature vid! And me with a couple of deer in the freezer Just had my 50th birthday and what did I get for gifts.... Chud Knife Roll Chud Apron And some Chud Rub Using all of them on some smoked pork chops as we speak Thanks!
Only thing I can think of to make this better is instead of bbq sauce is a wild mushroom gravy and pickled ramps / leeks instead. But looks amazing and I’m officially starving definitely trying this! Thank you sir
Daaaamn, that looks perfect. I'm not advocating or recommending, but that prep would make horse, dog, woodchuck, big ass rats, well hell, ANYTHING taste great
Kickass Vid Bradley. Hey I've seen Picanha cooked, fried, smoked, Grilled. Ya ok. I would like to see you my friend smoke ii then put in your boat and pulled at pull apart temp you chose . I have some Porter road Picanha ready to try it your way.
What temp did you cook it at and for how many hours…? My family and myself are HUGE hunters with a freezer full of deer and squirrel…. I’m excited to try this!
Nice one brother, would love to collaborate with you. Send you a recipe, and see your BBQ spin on it. Or I could deliver in person, give me an excuse to drop in on my son, and bring you and Miss Brooke some venison of your very own.😬

I'm in AZ also!! Haven't cooked wild game yet but it's on the list for sure

My elk hunting buddies and I are already making plans for elk shoulder Chudacoa!

Love how much you’re able to bake and bbq bringing so many aspects of cooking together. You’re truly one of my favorites
Love venison recipes!!! Keep ‘em coming! It’s the primary protein in our home so I’m always looking forward to new ways to prep. As always, you da real MVP.
I always look forward to seeing what little trinket is in the knife roll. 😄 The sammich looks awesome!
Would love to see a knife maintenance video :)

Usually do deer shoulders very similar. Sear over fire then finish overnight in crock pot with some fat, onions, and herbs. Very underrated cut.
Venison barbacoa is my go to. I love making tacos, enchiladas, tostadas and nachos from all the shoulder meat. Blending in adobo chilis with pepperoncini brine during the sous vide bath is a must. Your sandwich looked amazing. Great content like usual :)
I’m going to add this recipe to my venison tool belt. Looks very tasty!

Haven't even watched this through yet, but I am so excited to see venison again on the channel!
That buckacoa sando looks amazing

Please more smoke & sous vide combo recipes like this!
Moose and or elk barbacoa is a favorite in our house.
Just got done smoking my first venison ham. It’s amazing! I brined it for 6 days and it was an all day smoke. Removing the bone today and putting it on the slicer!
The word "jealous" is thrown around far too casually IMHO, but I'm very jealous. Enjoy it!
This one just sealed a shoulder i have in freezers fate this weekend have never thought of that thank you very much.
Lifelong deer hunter here and this was the absolute best front shoulder vid that ive ever seen.
Venison does great stewed. Venison birria and chili Colorado are two of my favorites. Maybe a homemade, smoked chilis video is in order. One way to cut down on gaminess is get the deer field dressed quickly and get it chilled fast.
Need some more sous vide recipes like a fool proof method for the perfect pulled pork etc.
You should do a choripan video. I feel like that would be right up your alley.
Made 80 pounds of venison sausage last week from one of your recipes, friends and family that don’t like venison have been asking for more!
Oh. God.
That looks incredible Bradley!
The food looks good too 😅
As a deer hunter here in the mitten state, I have a bunch of deer shank that I usually pressure cook. Going to try this instead. Looks like an awesome recipe. Thanks.
My mom makes her rolls like that with rosemary. Man that brings me home
My goodness, does that looks delicious. Great cooking method and execution, chef
I never thought of doing that. Great idea! Your videos are super helpful. I'm learning a lot !
I don't like deer, but after watching this video... changing my mind! Got a smoker check! Got a sous vide set up check! Got a Kitchenaid check!
Everything else from the store!
Looks awesome, I’d probably have added a little slaw in place of the bbq sauce but either way looks delicious! Nice job!
Bought a small farm and this was our first full deer season in Alabama. We harvested a couple of deer and I’m always looking for new recipes. This is definitely going on the list. What episode has the full bun making recipe?
I've got my first hunt scheduled in Easter - going for some NZ Deer in the Ruahine ranges - guess what I'm gonna be trying...
Thanks Brad - Always have some venison in my freezer. -Cheers!

Buckacoa well that’s just pure epic! 🎉
Thanks for the deer recipe! Definitely going to give this one a try
Need more of these. Have a freezer full of deer from this season.
Omg Bradley that looks amazing. Definitely on the to do list. Nom nom nom
I love this guy so clever
I see myself doing something similar but with a springbok leg, nearly hunting season here.
Great vid! Thanks Brad! What kind of dough conditioner do you use and does it make much difference? I know potassium bromate is banned over here in the UK and EU.
Bradley, never seen you review a product, how about a pitmaster review of the Weston smoker/crockpot?
Do more grilling/smoking game meats ect!!! Keep up the good work!!!
Definitely need more wild game videos! Great job
There is nothing better than venison backstraps, salt, pepper, onion served over white rice. Chiming from NH.
Hello from Canada Bradley
Awesome tasty forest creature vid! And me with a couple of deer in the freezer
Just had my 50th birthday and what did I get for gifts....
Chud Knife Roll
Chud Apron
And some Chud Rub
Using all of them on some smoked pork chops as we speak
Thanks!
Oh ya almost forgot... A BOOT SNAKE as well lol!
Only thing I can think of to make this better is instead of bbq sauce is a wild mushroom gravy and pickled ramps / leeks instead. But looks amazing and I’m officially starving definitely trying this! Thank you sir
A nice dark mushroom gravy would be fantastic
Daaaamn, that looks perfect. I'm not advocating or recommending, but that prep would make horse, dog, woodchuck, big ass rats, well hell, ANYTHING taste great
Gotta love venison
Kickass Vid Bradley. Hey I've seen Picanha
cooked, fried, smoked, Grilled. Ya ok.
I would like to see you my friend smoke ii then put in your boat and pulled at pull apart temp you chose . I have some Porter road Picanha
ready to try it your way.
What temperature did you do the sous vide at?
What made you pick 185 degrees for the sous vide?
What temp did you cook it at and for how many hours…? My family and myself are HUGE hunters with a freezer full of deer and squirrel…. I’m excited to try this!
Any recommendations on a vacuum sealer? Even a shameless plug for a sponsor would be appreciated
Those buns I gotta make em.
Neck roast is king for venison bbq.
How long was the venison smoked?
I’m gonna try this with beaver meat
Great idea. I’ll have to do this with one of my deer next season. Unfortunately it takes away from the delicious sausage to be made.
Nice work
I've gotta try.
Great video we always are looking for ways to use the front shoulders of our dear. We will definitely try. This looks awesome delicious. ❤
are you planning on doing corn beef and cabbage for st patty's day ? BBQ chudinator
Well, it isn't Lamb. But it's the next closest Penance I could imagine. Well done.
I’ve got a whole neck that I was planning to do something like this! After watching this I’m going to have to break out the sous vide😂
Good looking barba-doe-a!!!
I've got a deer and a hlaf in my freezer, what temp did you use on the smoker for those few hours?
Just for smoke. Don’t think temp is important as long as it’s below 325°
I make mine out of the neck roast. You can get all the meat off of it.
I'll have to try this with a haunch of kangaroo. It's very similar to venison and easier to get where I am
Nice! What more do you want.
Alright Chud, I have been trying to get you to take me up on the javelina, I can take a hint, will post to IG this weekend
Beefy for beef … Gamey for venison
Mouth watering ❤
Say MEAT like a caveman that works for me😬
Nice!!!! Killer video bruh
where's the pickles *bubble bass laughing*
Nice Video!
"Buck-acoa"....I bet I taste delicious (hehe)
Hook up with the Bearded Butchers bro. We could create good educational content and enjoy good meat!
Beefy for venison...would be Buc-Ee?
Instead of beefy, it's bambi🙃😁
Nice one brother, would love to collaborate with you. Send you a recipe, and see your BBQ spin on it. Or I could deliver in person, give me an excuse to drop in on my son, and bring you and Miss Brooke some venison of your very own.😬
mmmmmm venison!
1st time 1st 🤯😂😂🤣
Aww man that looked official. Throw it in some tacos too 💯
Bar-buck-coa
Huh wow
Surprised nobody has said anything about raw garlic in the sous vide bag
Deer-bacoa. Dang. I already know that was legit.
Beef “beefy”
Venison “veny”
👍
With only 1% fat and no inter muscular fat venison is not the easiest meat to cook but you did a great job
I feel as though Bradley could smoke my shoe and make it looks amazing.
Game meat taste just as good as pork or beef.
Something with an elephant on top of it.
Beefy for venison should be Bucky 💀
🤤
🤤🤤🤤🤤
Talkin bout buns like I ain't got none, whatchyou think I ate em all??
Cosmo whats up bro. Healthcare here in the house. Lets do the pork belly burnt ends promo. Looked perfect my man!
@me me Thanks brother. Out of respect to @chudsbbq I won't promote in his comments but I appreciate the love!!
Oh deer... I almost didn't like and comment. That'll be the day, when "elephants" fly 👍
