There is a lot of ways to do this for sure. This is just the way we do it. You can add any type of seasoning if you like but if I am being honest, I like my neck roast with just a little salt and pepper and apparently Trinity likes hers with ranch...🤦♂

Same here in Northern Ontario 🇨🇦. We ALWAYS harvest neck meat. Our wives (party of three) make a delicious stew with partridge and rabbit in a pressure cooker with the neck meat. Appreciate you sharing that with those that would otherwise overlook.

The electric pressure cooker is one of the greatest kitchen utensils. They pressure cook, steam eggs or rice, potatoes, slow cook, warm and require no supervision once started.
Wish I hadn't boned out the necks on both of the two I've got so far. That recipe is one that i'm defiantly going to try. If Vanessa ever decides to put these recipes down on paper, sign me up for a copy.

I used to use a 'crockpot' (slow cooker) for many dishes....finally got an InstantPot and, honestly, it's a game-changer as far as meal prep goes. Easy to clean, safer to use than old school pressure cookers, easy to learn to use and it's a fantastic time saver.

My brother got a cow elk this year in Idaho. She had been eating corn all year, and was finishing fresh winter wheat sprouts. We ground the meat from the ribs separately, and included that fat. Quite a lot too. Cooked medium rare, they are unbelievably good.
Last neck roast I had was a fresh “Bumper Stunned” button buck that had the misfortune of darting in front of my F350. Cooked it in a crock pot for some number of hours with random seasoning (no ranch - sorry Trinity...) It was delicious. Don’t overlook the neck.

I've done this same thing with the small/lower parts of the legs that most people throw away.. The pressure cooker really breaks it down to where it's falling apart. I think I even threw in a little pork, like some bacon and a few pieces of leftover ham that we had.. or pork chops, or whatever it was (I forget now). But the mixture of a little pork fat with the Venison is hard to beat.. I think most people even put pork fat or beef fat mixed in with their ground Venison too. The pressure cooker works wonders though. My favorite cut is the tenderloin.. It's on the inside of the rib cage, down towards the rear.. and looks like two little back straps along the spine, but again- on the inside of the rib cage (i'm sure you know this, better than me. lol). A lot of people don't even know to eat this part-- but it is the very best cut IMO, to simply fry up and eat without much prep or fancy cooking techniques; even better than the backstrap.
Agree with the pinned comment of a little salt and pepper. If nothing else, the salt will help balance the moisture. I would suggest searing the deer (you can do it in the Instant Pot.) Use the bullion to scrape off the fond, and then cook the deer meat in the pot on the trivet. The trivet allows the meat to stay out of the bullion so you are using the liquid to create steam and pressure and not stewing some of the dear in the bullion. Then again, we all do things the way that we like them. Nice video and it is good to see how you use the deer and how Mrs. O. cooks it.
I just finished a neck roast for lunch today that I cooked on Sunday! Nothing finer and about the healthiest meal a person could ask for! I just cut them in 2-3 whole chunks with the spine and everything in (best flavor ever). Season it and drop it in the slow cooker for about 6 hours (pre-thawed). 👍🏻👍🏻👍🏻👍🏻👍🏻

Wonderful video.. Years ago I started doing neck roasts in the crock pot with water and onion soup mix on top plus a few onions for 8 hours. I always cut the lower part off to remove the wind pipe and then saw cut the bones to section the roast. After cooking the whole neck bone would come out clean and the pile of meat would be phenomenal. It would separate like pulled pork so a bottle of favorite BBQ sauce and some rolls make delicious sandwiches. Cheers for the neck roast and thanks for posting this tip so others might not waste a great piece of venison.
I take the whole neck roast and the shanks, through them in a covered cast iron pot with beef base and what ever seasoning you prefer. Cook in a 350 degree oven until it’s fallen off the bone, 3-4 hours. And like you said taste tike beef pot roast. I divide it up in quart bags and freeze to pull out for quick meals.
Finally. Someone who knows that all parts of the deer are edible if you know how. Only thing I do different on mine is I put on a rub, and drop it on a charcoal grill at 250 degrees, put some cherry and pecan wood pieces to make a little smoke, and let that low smoke about an hour, then drop it in a instapot or pressure cooker. You can cook it on a grill completely, but you gotta spend quite a few hours low and slow, wrapping it after so long, etc. and who has time to do that when you're hungry? I'll be right over for a bite...as soon as I drive 16 hours to get there...LOL. Cheers.
I'll bet the liquors left in the pressure cooker make a seriously good gravy. The only smokey flavored gravy my folks ever made was from the liquors of my mom's apricot grazed Easter ham... that brings back some fond memories.

"Needs ranch" 🤣🤣🤣. Same thing my sons always say...sigh. Venison is one of the leanest, most heart healthy meats one can consume. We usually have one whole deer processed just into ground as we use it like we would beef: tacos, meatloaf, spaghetti, burgers, etc. Any other bonus deer we'll do cuts and sausage. Awesome content.

You are absolutely right about the venison fat. You don't want cook that. The liver, on the other hand, is fabulous. Probably the best tasing liver in the animal kingdom. ( at least the animal kingdom I have access to )

I usually cook the meat, release the pressure and toss in my cut up potatoes for 4 minutes. They usually turn out great.
