  • If you're unfamiliar with the delights of congee, then you absolutely need to try this recipe. Chinese rice porridge is a daily delight in China and many other countries throughout Asia, and there's a really why; it's so delicious! Soft and tender pork sits in the most luxuriously creamy rice and an intoxicatingly savoury flavour. Honestly, it might just be my favourite Chinese dish. Traditionally a breakfast dish, congee comes in all manner of flavour combinations, but this version is one of my favourites. See the recipe below: Recipe serves 2-4 (depending how greedy you are) .. Ingredients: 5 slices ginger2 garlic cloves (chopped)2 spring onion (whole)2 star anise (whole)4-5 black peppercorns1 cup long grain rice1 tbsp salt. .. Garnish: 3 spring onion (very finely sliced)1 red chilli (finely sliced)2 tbsp fresh ginger (finely chopped)sesame oillight soy sauce .. Directions: Add the pork ribs, ginger, garlic, spring onion, star anise, black peppercorns and salt to a large pan and cover with 6 cups of water. Bring to a boil then reduce the heat to low and simmer gently (covered) for 1 hour until the pork is soft.Add the rice and cook for another 1 hour until it's all broken up and creamy. Remove from the heat and fish out the spring onion, star anise and ginger.Ladle a few spoonfuls into a bowl and add a pork rib. Sprinkle with some spring onion, chilli and fresh ginger. Drizzle over 1 tsp of sesame oil and 1 tbsp of soy sauce. .. Notes: Toppings/garnishes are entirely up to you. I use whatever I have, usually fresh ginger and spring onion. You can also try cilantro, crispy shallots, peanuts, sesame paste, pickled vegetables, boiled egg, chilli oil, Kimchi or whatever else takes your fancy.
