    You must remember. Watch for a sausage or two to drop from the tree to determine if they are ready to pick. When your sausages are ripe, they should be fairly easy to pick from the tree with a simple upward twist of the sausage. Try to avoid picking a sausage by pulling the fruit straight down and tugging.

    Wow, those sausages have nice natural red color. I always thought they added color to make the sausages look that red. The meat inside looks so glossy and now I'm hungry. 🤤🤤🤤

      InFToN the meat inside is red and glossy because of the high sugar content and nitrates.

      @@cmsense8193 You can literally see in the video that no nitrates were added, only salt and sugar. It's the sugar as well as the fact that it was dried that made the sausage look very red. Had the sausages been air dried even longer (as in several months), the colour would have even been deeper and darker red.

      Others are saying the color can't be coming from nitrates because they didn't add nitrates to the mix... But they also hang the sausages in a tree outdoors for 5 days, and if you've ever air-dried meat you'd know that this sausage takes upwards of 3 weeks to properly cure. Also, the dried sausages had large visible chunks of fat in them, suffice to say, if you thought those were the same sausages, you're dead wrong, those are store bought, for sure.

      My dad use these square shape small air through (clear cover with tiny holes everywhere) that you can put them in and hang it up on the tree so the flies or raccoons can't get them. Honestly don't know what they're called lol but there's always a way.

    @ 1:51 the "white wine" should be Chinese "white liquor" - distilled wine with high alcohol content.

      @@doxxriff6141 There are so many brands from China and I am not familiar with those. If I want to choose, I will go for the one I always use. It's called "Kinmen Kaoliang" - a spirit made from Sorghum (a type of grain). People always say the wine is not good for drinking is not good for cooking, that is the reason I will choose it. Just would like to help and no commercial intention here.

    Chinese sausage tastes better than salami ! It includes more taste and flavor. Pls, try it . You may buy one from any chinese suppermarket.

      parrot Chinese sausages are for cooking not for eating as is. They are highly spiced for that reason. Salami is meant to be eaten as is, no prior cooking. There’s no comparison between both for that reason.

      you can hang it on a dry place in your kitchen, my grandma used to hang them over the fire place,
      or u can use a dry ageing fridge

    Great recipe but I think chef has not shown how the colour of the sausages became that red what is the add-on ?

      During the air-drying process, the water got out and the sausages become the color shown at the end naturally. There's no additional ingredient added besides everything shown in the video.

    Interesting to watch. Never knew what made Chinese sausages different from others.
    One thing I'm curious about is why there seem to be no Chinese sausage recipes that simmer and grill them like European ones. Did the Chinese think drying them just made them taste better? Was the reason more related to preserving food?

      Yes, it is related to food preservation. Chinese sausage has a long history. This practice originated 1,500 years ago.
