    I would strongly disagree that knife skills are the most important skill to learn when it comes to cooking. Yes it can have its benefits by reducing your prep time and its better to cut vegetables up instead of cooking them whole. But its not one of the top skill nor will it make your food taste better compared to other skills. Skills WAY more important and more impactful on your cooking 1) saute/browning/roasting/searing - if you can master this you will get more Maillard reactions going and your food will taste SOOOO MUCH better 2) Sauces - once you learn to make some basic sauces you can kick your cooking game up a notch 3) Seasoning - food way too bland? not using spices? TOO salty improve this and your food will taste better 4) how to cook foods to proper doneness - rice over/under cooked, potatoes still rock hard, pasta over/undercooked, learning how to do cook foods like this properly will be more valuable than knife work.
    Knife skills are more important in terms of safety, speed of prep work, turning a mushroom, making fancy garnish, etc but not a huge impact on flavor of the food. I had crap knife skills for 5 years and my cooking improved learning those other skills way more than if I had improved my knife skills.
