  • Veganuary is a cool concept where people go vegan for the month of January in an attempt to improve health and environmental impact on the planet by cutting out animal products. Going vegan can seem daunting but we've writing this recipe especially for beginners. We break a recipe down and explain why we add each component. After it you'll hopefully understand how to create a recipe and you'll feel more confident on your journey.

    My recipe notes from the video, in case they're useful to anyone else:
    INGREDIENTS:
    Wholemeal noodles (gluten-free options: buckwheat or rice noodles or rice grain)
    1 block firm tofu, cut into 4 thin slabs
    2 Tbs oil
    Glaze for tofu:
    3 Tbs dark red miso
    2 Tbs maple syrup
    1 thumb size piece of ginger
    , minced
    3 cloves garlic, minced
    1 red chili, medium hot, minced (for
    less heat, remove seeds)
    1 leek (white & green parts) sliced lengthwise and chopped into large chunks.
    1 large bunch pak choi / bok choy (remove base, chop and separate white and green parts)
    1 tin black beans (rinsed & drained)
    1 tin coconut milk (lower fat option: substitute veg stock and reduce down to thicken)
    2 Tbs tamari
    Juice of 1 lime
    Optional garnish: pomegranate seeds
    DIRECTIONS:
    Boil noodles for 4 mins (or time stated on packet). When cooked, drain and rinse in cold water to stop cooking.
    Gently squeeze tofu to remove moisture.
    Heat 2 Tbs oil in large frying pan on high heat. Sear tofu strips on one side, until golden. Mix miso and maple syrup to make glaze.
    Turn over tofu and smear the cooked side with miso-maple glaze. Turn over tofu again and add glaze to other side.
    Once tofu is slightly blackened on each side (approx 1 min each side after adding glaze), remove from pan and set aside.
    To the same frying pan, add 100 ml water to deglaze, scraping bottom of pan. Add ginger, garlic, chili and stir. Add leek and cover pan for 3-4 mins to steam.
    When leek is softened, add white part of pak choi. If pan dries out, add a bit more boiling water to maintain steaming. Cover pan again for couple of minutes, until the vegetables are softened.
    Cut cooked tofu into different size chunks, and add to pan.
    Then add coconut milk, tamari, lime juice and cooked noodles (or cooked rice). Lastly, add chopped green part of pak choi. Stir together. Top with pomegranate seeds.

    *update* so, I swapped out the wheat noodles for rice noodles, added tinned lentils instead of beans and used courgette, pak Choi and spinach! Honestly, my husband actually asked for more, he’s still clueless he was eating tofu🤣🤣it’s the first time I’ve ever used it. This was a big hit and will definitely be made again. 😀

    Really good presentation. For severe health reasons have been compelled to eat vegan and most of your recipes have been very hejpful. I just eliminate the oil and sub veg broth. 5hank you

    Regarding coconut milk/cream - if you're not used to cooking with it, start with a smaller amount first, taste, and add more if you find you like it. Personally, it's too strong for me to use a full can like this in any dish, but a small amount goes a long way as far as taste goes, especially in curries. I'm not scared of fat, but for some reason I find warm coconut cream particularly heavy on my digestion, so what I'll often do when I want a coconut flavour is add dry shredded coconut instead of milk/cream. If you don't like the texture of it in your dish - the small dry(ish) bits all over the place 😉 - soak a while beforehand in hot water or grind up into coconut flour. Nom! 😋 😊

      @@LaurenBurger VEGANUARY is a "challenge" to start 2019 by giving veganism a chance for a month. It's something you can (for free) sign up to, to have access to tips, recipes, a mentor, a community and so on. It's a really amazing concept and tons of people are signing up (1 every 8 seconds apparently). You can look it up on Google, Facebook or even Instagram, there is ton of resources :)

    Happy new year, guys. This Canadian loves the fact you are always using maple syrup. This time of year here in my part of ontario, Canada, I make a lot of hearty vegetable soups which give me a belly hug. My favourite is parsnip, pear.

      I'll try this! Does it slice well frozen or does it need to be slightly defrosted?..and lastly do u squeeze the liquid before freezing?

      @@espydesertflwr4781 There is a comment above that suggests squeezing prior to and again after freezing it to get rid of as much liquid as possible. Have not tried myself.

      Does not freeze totally solid and has a texture I like to handle more than if I didn't freeze it.
      Will try the squeezing like Stephen mentions------ :)

    I’ve been a vegetarian for the past 3 months and bought my first tofu couple of days ago.Its been sitting in my fridge because i didnt know how to cook it. This recipe looks right up my street so im gonna give it a try! Thanks!

      Hi Demi Day; The first time I tried tofu I did not like it. I didn't eat it for a long time after that; I figured I was a vegan who hated tofu. However after leaving a comment on another channel, I really heard an ear full. Long story short, I was recommend to drain my tofu-then freeze it--thaw it--drain it--then cook it. And the texture was so much better and adding a marinade or other seasonings made it even better. Try the YT channel 'theEasyVegan' for an awesome demo and recipe. It changed the way I look at tofu; of course, I still can't eat it unless I freeze it first, but at least I can say I eat tofu. I was afraid my vegan card would have been revoked--JK.       Demi Day Its a flavourless sponge that sucks up all the flavour you trow at it. Can be a bit tricky to master, but really satisfying if it works. Definitely check out cheaplazyvegan’s turtorial too. Also order it at take-out for a reference. Good luck.

      I like to marinade and bake my tofu, basting it with the marinade as it cooks. Then cool it and slice for salads as well as stir-fries.

    Hi guys. Happy New Year to you both and your families. I am not vegan or vegetarian but am using more plant based things like oat milk. Every time I have tried tofu in soups, restaurants etc, it's not been pleasant....the texture just seems weird. Can you recommend a decent brand of tofu? Thanks guys. Have a great year.

      Fair play on using some alternatives. Tofu in restaurants can be trying at the best of times. If the texture is to wet for you maybe try cutting it up smaller so there’s more surface area to crisp up. In restaurants they just kind of chuck it the water to cook it which can be a bit slimy.

    guys u always brown your tofu: haven't you heard of the advanced glycation end products (AGEs) that form when you (dry) heat these high protein foods?

    Tried this on day 1 of Veganuary. I was sceptical from the start because it just seems like a weird combination. It really isn't that good at all. P.S. Tofu sucks ass

    This was delicious to make but definitely needed adjusting due to measurements being WAY OFF. You guys were using splashes of water, not 100 mls of water at a time. If you use the measurements stated in this video, you will be boiling your veg, not steaming it. I tried to look on your website and there’s not a recipe w proper measurements on there either.

    Before I was vegan and got poorly I used to love either runny boiled egg with dippy soldiers or cream of chicken soup, what can I use or do as an alternative?

      Hot for food has a recipe called vegan breakfast trifle that includes a "yolk" sauce you can pour over tofu in place of a real egg.
      For cream of chicken soup you can make a creamy vegetable soup using coconut cream, or by making a vegan roux blended with a boiled starchy vegetable such as potato, zucchini, etc., and you can use prepackaged vegan chicken bought at the store or tofu or beans or lentils or mushrooms or whatever you prefer in place of the chicken.
      Vegan cooking takes some experimentation and trial and error but it is worth it. :)

      you could do a soupy dhal with lots of turmeric and ginger in there, maybe some chilli to kick out any feverish-ness. lentils are super good for you too. chuck in some fresh spinach at the end for green vitamins and iron too!

    I love garlic but I don’t think use of garlic as base is not really Japanese cooking traditionally.

    This is why I love you guys. You take the time to explain WHY instead of just listing ingredients, instructions, etc. Although I've been vegan since 2005, I have learned so much from watching your videos and can now use the knowledge you've given me to tweak recipes using ingredients I have on hand or create new ones. I used to somehow survive off of frozen chick patties and Oreos and now because of The Happy Pear I've never been healthier! I thank you guys from the bottom of my gut!

    Thank you for posting this recipe - and especially for replacing coconut milk in it with veg stock. Having gone from 25 years + vegetarian to vegan in November struggled with so many recipes using cocunut milk. I don't like coconut - despite trying to!

    Traditional european flavour base is onion, carrot and celery. That will see you through a lot. Chop and fry a brown onion transparent to brown, chop and add the carrot and celery while that's going on, carrot is tougher so that first. It's handy that you can do each one while the other's cooking. I like to chop my onion in thin complete rings, in other words in one direction only after halving it. It cooks as quick, 'cos it's thin, but has lots of nice texture from being quite big rounds (or halves).
    You can add or leave tomatoes to this, ditto herbs. A really good dried mixed herbs mix will go a long way, eg 'italian herbs', or 'parsley sage rosemary and thyme' fresh is best but only parsley is useless dried. Fresh rosemary and sage just chuck in as whole twigs, even with thyme, and fish them out at the end, they're not particularly digestible unless they cook well. Leaves that cook well will fall off, and the tough stuff won't. Lemon juice (at the end) is another thing that always goes well, but not with tomatoes (too much acid).

    I'd love some cupboard / staples recipes! it's easy to cook delicious, healthy and vegan with fresh veg but sometimes I just don't have time for buying groceries and it's easier to open the vacuumed ham or some frozen pizza or sth
