@@arcobalenonellorto8994 I know the real way I am from Creta but you need milk from goat and ship mixed temperature 35degrees C and you put into milk something like powder that is made from first milk of goat and it is dry.After you do that after one hour milk became like yogurt and it is separate milk from yellow liquid you put also some salt in milk when you put that powder I told you about.Then you take the piece of milk that is like heavy yogurt and you put it at list 3 months into salty water with much salt not some and that salty water must cover cheese which is soft and became harder after 3 months.For somebody in a city it's difficult found that milk and most difficult found that powder which is selling in agricultural unions par example in Creta.I hope I made clear the way for you. This is not feta it is farmer's cheese and using lemon juice in a bottle is better as it is at a certain level of acidity (US) according to standards. No need for the glass jar either you can do it in the pan over medium/low heat until just before it boils you just need to stir it you do not want it to burn.
If you don't put the salt it is farmers cheese and you can use in pastries, I still don't understand why you put the milk in glass jar,when is more simple to put the milk in the pot,something.

Before trying this recipe and using 2 litres of milk, add pure lemon juice to yogurt or milk, if it is tasty then go on.because that's how the taste will be
