This show is so wonderfully chaotic already, but you add in Sean Evans spice & made it masterful. With how professional Hot Ones is, you could visibly see how shocked Sean was every time something "went wrong" or something that would've required an edit on his show happened, but they just soldier on - because George is a legend, lol! Great episode, per usual!

Sometimes life hits you like The Last Dab.
Capsaicin, the hot active ingredient in hot peppers, is fat soluble, so eating something high in fats, like butter or whole milk (cream is better) or mayonnaise, will dissolve the capsaicin in your mouth and carry it deeper into your digestive system.

I’d still like it to happen one day because Motzman handled The Last Dab Apollo well for a “spice wimp”, but if it doesn’t happen, it’s okay. Plus we’ve all seen enough Hot Ones to know some tapped before The Last Dab long before Apollo

I paused and rechecked to see whether he dodged the chunk he put the sauce on, but he did *not* . And it's been said by Sean that the wings 1-9 help you get into the last dab and immediately going to 10 is *worse* . So applause for George, well done!

Sooo glad the Green Chile cheeseburger is getting more love. People genuinely don't know what they're missing out on. For the truly local experience tho: You need whole, freshly roasted, not-diced green chile strips on your burger.... this is the way.

Something I made at home a while back was a burger with two small chile rellenos on top. It's got the chile, the cheese, the burger, it's great.

My favorite part was when Sean sympathy drinks his milk with George, even though Sean wasn't even eating the last dab. You're always in the zone man! Such a PRO!

I grew up with the Horseshoe being from just north of Springfield. They are amazing but typically 100% of your daily calories on one plate. The buffalo chicken horseshoe is amazing, the cheese mellows the spice nicely and makes for an incredible eating experience.

I love how much George outnerds Sean. I’ve never seen Sean so thrown off by all the info it’s hilarious seeing him not in the driver’s seat. Even when Sean’s getting interviewed he usually seems like the one in control. George is the only guy I’ve ever seen manage to do that to Sean, respect.

George is so like-able in the most Chaotic way possible. He’s all over the place but his knowledge and passion for burgers ties everything in. I freaking love the dudes personality. On top of Sean always being a staple for FWF, this is a great episode.
I've actually been to Hatch, New Mexico for a college course, they make it a point to stop in and try the local food - they're incredible, very cool place. I forget the name of the restaurant we went to, but they had incredible food, all local and fresh

I visited a friend in Illinois and we went to D'arcy's Pint for Horseshoes. They have rotating specials for the Horseshoes, and the day we went it was a Philly Cheesesteak Horseshoe. Tastiest thing I've had in my life to this day.

That's actually a neat strat. Butter is a fat, which helps dilute capsaicin. It may be a good idea to have those little packets of butter around the next time I open that bottle of the Last Dab I have lying around...
Glad I checked the comments before posting what would have been a repeat. Yes, the fats in milk bind with capsaicin as well as the receptors on the trigeminal nerve endings, easing the burn in two ways.

I was visiting my wife’s family and randomly started talking about burgers, smash burgers, how in and out started, how the drive thru was invented, regional hamburgers, and they were like “where did you possibly learn all of this?” And everyone was amazed lol I realized then and there how much I’ve learned from watching this channel. George your awesome and I am so glad you had Sean on the show as well. He’s the best interviewer ever. Perfect duo.
There's a hydrocarbon at the end of the capsaicin molecule that is soluble in oil. Therefore if Oil comes into contact, it dissolves and is washed away. So that's why butter helps. Or a spoonful of EVOO.
For Alton Brown's appearance on Hot Ones, he brought half & half. Higher milk fat content than the usual whole milk the show provides. He said he would have brought heavy cream if it wasn't so unpleasant to drink straight.

This is such a contrast of styles, and I ADORE it.
Burger Scholar (and George in general) is so high-energy, chaotic, with a "by the seat of your pants" feel, while Hot Ones (and also Sean in general), is slightly more professional, calm, collected, and a bit more laser-focused.
... Nothing about that previous statement is supposed to be a complaint or criticism at all lol. I love the both of them, and this was incredible seeing that clash.
Praying for more stuff like this in the future.

I'm from New Mexico, born and raised, and I'm surprised at how accurate these burgers were.
We ALWAYS try to cover the entire patty with green Chile.
Some quick cultural learnings from someone who has lived in NM for 30 years:
1. Native New Mexicans rarely call our green chile "Hatch" chile, mainly because chile is ubiquitous in NM and we do not tend to differentiate the location. Although, as Colorado pushes their green chile into the mainstream, this has been changing over the years. I still wouldn't count on a native New Mexican to say "hatch chile". Most people who eat NM Chile have never even been to Hatch.
2. Depending on where you are in New Mexico (north or south), our xxxhot batch is usually called "lumbre" or "barker". You can get any type of batch in ALL parts of New Mexico, from mild to xxxhot. I usually buy a bushel of hot (usually called "Sandia") and a half bushel of xxxhot ("lumbre", or "Barker") and mix the different peppers 2:1. This makes for a delicious taste with a really intense heat.
3 As the green chile ripens, the green chiles turn into red. We make a delicious red Chile sauce, with these peppers, in NM. In MOST locations, you can ask for a mix of green and red Chile called "Christmas". This is what I order every time I eat out. In fact, the official state question is: "red or green?".
4. Finally, off the top of my head, some of my favorite restaurants that serve GREAT green chile cheeseburgers: "Sparkys" (hatch, NM)," Blake's Lotaburger" (All of NM), "Days" (Las Cruces, NM) "Laguna Burger", "owl cafe", "frontier"(ABQ, NM), "The Burger Stand" (Taos, NM).

Living in Illinois my entire life, I sure do love the horseshoes...such varieties, different cheeses for the sauce, some places mix gravy in with the cheese, different fries, different meats.. definitely one of my favorite meals

This is the first time in decades of watching cooking shows I've even heard anyone mention a horseshoe, central Illinois' greatest culinary gift to the world but perhaps also its best kept secret.
I have serious doubts of sean being a human. I think all the spice he consumes has burnt his insides and his soul. He kinda reminds me of an advanced humanoid because of his speech tone and absolutely no expression on his face.

Retired smash burger guy here- Take your puck of beef, center it with your turner [ O ] and press (with a can/seasoning shaker atop the turner) the burger, rotating the turner as you go. This will allow you to press the burger w/o having to do that pre cook square/flip.

Butter works because Capsaicin dissolves in fat, oil, and alcohol. So when you have those The Last Dabs the best way to fight it is with a shot of booze, olive oil or, for George, butter!

Butter works because it encapsulates the capsaicin and coats your tongue and throat so it doesn't trigger the false burning sensation from the nerves as capsaicin binds to the oils and fats instead.
Two of my favorite guys, they should do a show together, Motz and Evans - Burger P.I.
