  • We catch and cook parasitic lamprey. Find out how lamprey tastes! Order the MMM-GRILL here: www.shop.mmm-u...
I catch a parasitic lamprey in one of Lake Ontario tributaries which is attached to a live salmon. These lamprey attach to the outside of a fish and essentially consume their blood like a combination of a snake and blood sucker. They have nasty raspy teeth that suck on and hold tight, and don't let go. Although they do seem to release if they come out of the water such as when we land the fish.
The lamprey is very slimy and seems to hold a lot of fish oils as the smell and taste of fish is very strong. Since they don't have any bones at all, just cartilage, they are easy to clean, and prepare for cooking.
I cook the lamprey at the tarp shelter with a flour batter and egg wash with woodobo spices, cook in hot olive oil over an open fire using my MMM Grill.

Lampreys are an ancient extant lineage of jawless fish. Adult lamprey have toothed, funnel-like sucking mouth. The adult look like eels, are scaleless, and have elongated bodies, they have eyes, nostrils and gills out the sides of their head. Instead of vertebrae, they have a series of cartilaginous structures.
Lampreys are consumed where they are abundant as food for humans. King Henry I of England is
said to have been a big fan of lamprey eating and continued to eat them despite advice from his physician concerned by their richness. They are seen as a delicacy in Finland and in Latvia (where lamprey is routinely sold in supermarkets), larger lampreys are still a highly prized delicacy.
The mucus and serum of several lamprey species, including the Caspian lamprey, river lampreys and sea lamprey are known to be toxic, and require thorough cleaning before cooking and consumption.
In Britain, lampreys are commonly used as bait, normally as dead bait. Northern pike, perch, and chub all can be caught on lampreys.

If someone doesnt like heavy fish smell or generally fish smell you can always dump the fish into something with acid for a while e.g. lots of lemon juice or a mixture of vitamin c powder and water etc - because the origin of fishy smell is Thrimethylamine which is basic & the acid breaks it down :P

@@trailtrashoutdoors8173 you are welcome :) Acid is also a trick for fish bones by the way. In case you don’t know: 1) filleting a e.g. trout 2) cupping (every 3-5 mm) the filets at the thicker part where the Y bones are 3) put something with acid on it & let it sit for a while. - then just season it & if everything worked out you should be able to eat the filet without caring about the bones anymore aka you shouldn’t even notice them. - Should work with any fish but depending on the bone size in the filet the time to let the acid sit varies.

Lamprey is pretty good, you just have to use salt on your hands and wipe down the lamprey and bleed it first. This will take off the mucus coat or slime, and get rid of the fishy taste. After that you should definitely gut it, it’s really good depending on how you clean it

I really enjoyed this. Historically lampreys were eaten and valued, considered to be a delicacy. As with all foods there are ways to prepare them that make the most of what you have to start with. Seeing bloated white fuzzy five foot long spawned out dead ones in the stream I fished for brook trout in New Brunswick did not encourage me to try eating them but I am glad you did.Thank you.

I watch some Japanese cooking channels, and they deal with slimy seafood by basically rubbing it in salt. The salt essentially draws moisture away and helps you get the slime off. Which is a source of the fishy/smell flavour. And apparently using the salt to draw some moisture out of the flesh also helps get rid of the smell and fishiness. You do end up using a fair bit of salt doing this though.
I don't know if you're ever keen to eat lamprey again, but it might be worth a shot in the future.

In Japanese, lamprey is called yatsume unagi (八目鰻), or “eight eyed eel”. The most common preparation I’ve seen is called kabayaki (蒲焼), which is also how unagi is typically prepared in most Japanese restraurants. The fish is split down either the back or belly, gutted, and briefly steamed before being charred on a charcoal grill while being basted with a sweetened soy sauce-based glaze.

Back in the UK I used to catch their tiny cousins, Lamperns/River Lamprey- good for European sea bass. When they suckered on to my hand it used to freak me out. I’m not sure they still exist now. British Fishermen, when they still used just sail, would carry them to waters off Canada & New England and hand-line for cod and halibut. The boats were called well smacks- the middle 3rd of the boat had holes in it and it had enough water flowing through it to keep fish alive until they got back to England.

What you said about olive oil is absolute bullcrap. The smoke point has nothing to do with the oil breaking down and becoming toxic, that is only an issue when oils are repeatedly reheated and reused at high temps, as in bad fast food places. Olive oil has been proven by research to be the most stable and safest oil to consume at high temps, while it also retains its antioxidants compared to other inferior oils. The only down side is it imparts a heavier taste on the food youre frying, so it can become overpowering. Mediterranean nations use olive oil for everything, and they tend to be the longest living nations in Europe. That is reflected by their healthy dietary choices

Hey bud, Just a small tip; olive oil is bad for cooking over a fire. It smokes/ burns at a relatively low temperature. Use vegetable oil, or canola (cheaper than avocado or Peanut oil) or something with a high smoke point for frying or cooking on a fire.
Edit: You can mix oils/ fats together to raise the smoke point of the more volatile oil. like adding butter to olive oil will raise butters smoke point... adding saved bacon grease to oil is my favorite flavour enhancer.

    Hi bro.
So to prepare it you would normally start with ash, and roll it in the ash first then hold it at the head and pull the ash off stripping it of its slime. Then repeat as necessary. This will help to remove the fishyness lol and make it way more palatable. The best way to eat it is smoke it smothered in golden syrup. 😊
Hope this helps if theres a next time.

I prepared these for a ritual once for a local tribe. You need to use a pair of pliers to rip out the spinal cord predator style as it is not very tasty. Ripping the skin off also makes it less slimy and less fishy. The rest is...edible.

"Fish slime turned into egg meal.....that could be a delecacy". Lamprey is very much edible, I heard the french actually eat them with delight!

The French as well as the British loved eating lamprey back in the olden times.
I don’t see what’s unappealing about it, just looks like your average fish to me.
Bet it’s not even as slimy as monkfish or seadevil.

I really appreciate you taking one for the team (Kev & Don, too). Now I know they are edible; if I should ever find myself without food but a lamprey in hand. Other than that "not a chance" will you ever catch me eating one.

Next time use the wood ash to take off the slime. It is used on eels, so I think it should work for any slimy fish.

Get rid of slime before you cut or section off the fish by just dipping or blanching the whole fish in boiling water for maybe 10 sec or just long enough, the slime will solidify and u can scrape it off, then you can prep the fish the way you want to.

The people on the Yukon eat lots of lamprey. You should travel north and see how they cook them. As an Alaskan I too appreciate the longer sunny days with temps still below freezing. Best time of the year to be out ice fishing and snow machining.

Chris (please excuse the familiarity, I'm aware of etiquette but I am an American).
As one that watches your videoed adventures and appreciates your sense of humor, I'd like to tell you about these blood-sucking parasites that infest much of America. Strangely enough it's rumoured that they taste like beaver, but they smell fishy. They are commonly known as "barflies". And another curious thing about them is that they prefer to suck the blood from a particular area.
I, personally, have not tried them so you may decide to disregard this comment as I can only give you second-hand info.
Keep on surviving and laughing. Blessings to you and your family and Jeremy.

You can get the slime off most eels by freezing them in a bag of water and the slime rinses off when thawed
