This is a Sudanese/South Sudanese blended okra stew. This stew has a slimy texture to it and it is cooked with meat in a blend of garlic and spices. It is a simple yet delicious meal that you would find in many Sudanese and South Sudanese households. There are many ways to prepare okra and this is how I make it.
INGREDIENTS LIST:
1 kg lamb (beef or goat)
1 kg fresh okra
1-2 tablespoons of canola oil
1 medium onion
1 tablespoon cumin powder
1 tablespoon coriander powder
2 tablespoons vegetable stock powder
1 tablespoon garlic paste
1 teaspoon dill paste
Salt
Black pepper
HOW MY FAMILY & I EAT THIS:
We eat this with kisra (fermented Sudanese flat bread), injera (Ethiopian flatbread) or asida/ugali (maize meal)
