    Is your sourdough starter made with einkorn as well? Any recommendations/advice if im using fresh milled einkorn flour?

      My starter had einkorn in it but not 100%. My advice for freshly milled would just be to look at the consistency of my dough in the video and try to match it. It’s going to seem dense, because it’s einkorn. You definitely don’t want runny. You want a workable dough but not rock hard either. You want a very sticky, spongy, but not runny, dough. It might take you 2 tries to get it right, but I promise you will. This recipe is not picky and I have experimented with many dough consistencies and it comes out great each time! You can also always add more flour in the morning after it is fermented while you’re forming the muffin balls if you think it is still too sticky. Its pretty hard to mess this up!

    Hi Alexa! Would you have this recipe in grams? At least for the flour, water and starter?

      Sorry, I do not. However I’ve done this many time without even measuring, so it’s not a very picky recipe! They should come out great just using measuring cups.

      Just made them and they came out great! Nutty einkorn with slight sourdough flavor. Perfect for breakfast sandwich or butter and jelly ❤
