For the soup:
1 can of butter beans
1 large leek - chopped
2 large carrots - peeled and chopped
1 large onion - chopped
a large bunch of parsley - stalks and leaves separated
1 stick of celery - chopped
Juice of 1 lemon
700 ml Chicken Stock
Fry the onions and celery in a little olive oil until translucent.
Add in the parsley stalks and continue to fry.
Add in the leek and fry until softened.
Add in the carrots, then the vegetable stock and simmer with the lid on for about 15 minutes.
Add in the butter beans and continue to simmer for a further 10 minutes.
Add in the lemon juice, parsley, and Kale - stir through to warm.

Some years ago I met Julia Child at a book signing for her Cooking At Home book. I thanked her for teaching me how to cook and told her I was still throwing things on the floor. She threw back her head and let out her wonderful laugh!

I'm so glad you chose Mouse's Back for your living room. It's so comforting and the perfect backdrop for your furniture and accessories. I had to smile at your Fortnum and Mason hamper as it reminds me of the thank you hampers Mrs. Pumphrey and Tricki Woo sent to his Uncle Herriott in All Creatures Great and Small. Speaking of which if anyone is in need of a comforting tv show the recent remake of All Creatures that's currently airing Stateside on PBS's Masterpiece is wonderful.
I live in Canada, James Herriot has always been my favourite.
We're getting the new PBS All Creatures as well as the original version on a local channel, how lucky can we get :)

I've was binge watching All Creatures Great and Small last spring, as I signed up for Brit Box on Amazon. It was my comfort show as my mother sickened and passed away. Mrs. Pumphrey and her baskets! I can't believe it took me so long to watch, as I skipped it back in the day.
A lovely way to end my evening. I have to admit I spent most of the video looking at Sophie and you can really tell that she's living a beautiful life with you Nicholas. She's got a beautiful spirit and similar to myself (I've a four year old female beagle) I have my dog with me all the time and she is such a wonderful, HUGE part of my life. Thanks for all the videos. Its been a joy discovering you during lockdown and I absolutely loved last weeks episode in Gleneagles, its at the top of my list of places I want to stay. Hoping I can get there for my 35th birthday this summer. Scotland has so many amazing places like Gleneagles that would be amazing for the videos. I've only had the pleasure of visiting Edinburgh once but it would be amazing to get to see more of it in the videos now that things are opening up. We stayed at the Balmoral which I love seeing in your videos. If you haven't been, Noto was one of the best places I've ever eaten, other highlights were Spry Wine, Elliots, Smith & Gertrude and Panda & Sons. Oh and The Milkman for coffee (I know youre not mad about coffee but def worth a visit). Have a great weekend and def try and visit us here in Dublin soon.

I've eaten a big bowl of homemade soup every night since 12 January, when I was trying to tempt myself to eat after being ill. I cook a big mixture of 8-10 fresh and frozen mixed veg, with about 3 ozs red lentils in veg stock. All the fibre and protein, and very easy and filling. The lentils melt down and thicken the soup wonderfully, and there's enough for 3 days.
You remind me so much of Martha Stewart! And that is a high compliment. She is the definition of grace, elegance, and talent. All of which you embody beautifully. Thanks for your videos!

It was insider stock trading. She went to prison and helped teach the inmates how to cook. I'm am a big fan of Martha Stewart.
Weird because Martha Stewart went to jail for insider trading. I just think Nicolas’s cooking is not related to anyoe, but himself for his wonderful cooking ideas and recipes. He is a talent in his own.
What a view you have!!! Are you kidding me, that is spectacular! I love your walk-abouts and short trips & views of the country side and even the city sides of life where you live! Good job on the organization! The soup recipe is SO simple and SO rewarding and tasty! I found it fascinating and encouraging that, while she led a full and exciting life before her cooking show, Julia didn’t even become “famous” on TV until she was 50! That gives everyone encouragement to keep chasing our dreams! I’m excited about your kitchen results and while you were talking about “neutral” colors, I was looking at your inspiration colors right there sitting pretty in your lap! Sophie’s colors are beautiful and go well with your paint in your living room! Love your channel and am a fan for life! All the best to you!

Loved the look over the City of Edinburgh with you & Sophie (a very historical place) - the visit to the book store (very tranquil) the soup you made (delicious) including dropping the lemon (really lovely made me laugh - how many times have I done that myself while cooking) the changing of those yukky red tiles (great) looking forward to seeing the lovely new neutral tones & most of all loved Sophie jumping on your lap for a cuddle - what a gorgeous wee doggy really appreciate your uplifting presentations.
Loved visiting the bookstore with you! The shop displays so much more character than our sterile B--- & N---- stores here in the USA.
Am delighted that you have discovered Julia Child. At 80+, I vividly recall her original Boston TV broadcasts and those of a Beacon Hill neighbor, Thalasa Cruso. As you are anticipating spring gardening, you might like her book, Making Things Grow, based on her long-running newspaper horticultural column. She, like Julia Child, was delightfully down to earth; and a few videos of her own programs and guest appearances can be seen on U-tube. Happy cooking; happy gardening! You are a delight !😊😊

But I have to confess a nostalgic longing for the small service- oriented bookshops of yesteryear, with their alcoves, windows, and proprietors who knew you and called you by name. Happily, that still exists somewhat in the used- and antiquarian book trade! 🙂😉

I knew you’d find something fab for that kitchen tile. I think you should film it. Just in case it goes smoothly. Then you can share it. If it doesn’t and things go awry you don’t ever have to share the footage at all but you’ll have it for posterity’s sake☺☺

I find your blogs so relaxing I have given up watching ASMR in favour of your natural approach.
Will definitely try the soup. Suggestion: top it off with a sprinkling of grated parmesan cheese then drizzle a bit of olive oil on top just before serving. You can also serve with a piece of grilled country bread, rubbed with garlic and a sprinkle of olive oil. Makes a whole meal. Enjoy your channel.
I skip the lemon juice and instead add a drizzle of lemon olive oil and some parmesan!
You are so relaxing to watch and listen to. I would like to see you with some friends doing anything. Cooking, walking, having a tea party, being hosted for dinner by you (and you could make that a 2 or more video series - the planning and shopping, the cleaning and prep and flower arranging, the setting the table, the cooking and a bit of the party) as soon as it is safe to do so. You seem so solitary that I enjoy the videos where you interview people, like that designer, or interact. Make something from Julia Child’s book with a friend. Maybe you have a chat with someone at one of the cool places you visit and they share some of the history of the place. More walks, for sure. Always wonderful. On the other hand, you could keep doing what you are doing and husband and I will keep watching. Happy 2022 to you and top all of your viewers.

My boyfriend works as a barista in a cafe at a bookstore established in 1894 (that’s old by USA standards) in Pasadena, California. Your video featured books, and Julia Child was born in Pasadena. All you needed was some coffee! I just want to say that view of the city is so beautiful and peaceful. I wish I was there!
I grew up watching Julia Child. She was really fun to watch and one of my favorite memories from one of her shows was when she was showing all the different contraptions you could use to poach an egg, and then suddenly swept them all off the counter and said “But you don’t need any of those.” Or words to that effect. It was so unexpected, I remember bursting out laughing. I obviously remember that to this day. 😂
I have been trying to find that- if it is the same one I am thinking of- she talked about it and then swept it away and I thought she said “I do so hate those things!” It may be a different one but my sister and both love that!❤️

I've loved and watched Julia Childs since I was a little girl wayyyyy back in the 70's! She used to air on WTTW Channel 11 here in Chicago. Her and Jacques Pepin were my absolute favorites ~ I was mesmerized by them both. Enjoy your journey with Julia 💞

First off, you looked like a model with that beautiful sky line and architecture as the wind was blowing. I’m a huge fan of Julia Childs. Being raised in Boston, she was on tv all the time. You’ll enjoy her chapters on eggs, fish, deserts and I especially love her potato & vegetables. Julia Child is such an inspiration - we saw her in TV in New Zealand years ago, but I have read books about her and was lucky enough to see her kitchen in Washington DC a while back.

That bookstore in Edinburgh was such a treat! I love bookstores as well as libraries, because you never know what you'll find there. As for the soup you made, I'm going to try to make it myself. I love soups that are hearty and comforting like the one you made.
What a wonderful city you live in and is still on my bucket list. 😍 I also love to watch you when you are in the role of a cleaning devil but allow me to give you an advice. As you have 4 glasses of each it would be better to line it up from back to front. It's more clear and easier to find them because your cupboard is wider than deeper ...the healthy broth looks so yummy and I cook it every week and scoop it from breakfast to dinner. I love the movie Julie and Julia! It was such a lovely film. Amy Adams and Meryl Streep are both such wonderful actresses. I didn't know anything about Julia Child before that movie either and it appears she was such a funny, laid back lady. WIll definitely try this healthy soup recipe, thanks for sharing :)

Beautiful Nicolas. The soup looks really good, but the bowl 🍲 you put it in reminded me of the soup bowls my Grandma Fraser used to use. Same Grandma that gifted me with the shortbread that I spoke about on your shortbread video. I’ve been thinking of her a lot lately because of your videos. Thank you for sharing this healthy meal. I made my soup with different coloured carrots (purple, yellow, orange) which gave the soup a different look... coordinating with your candle come to think of it.

Leeks are a staple for me when making soups, My favorite in the onion family. I make a soup similar to this but I like to add my carrots in with at the same time as the onion, matter of preference because I like them soft. If you like to add extra herbs with the parsley Thyme goes well with lemon

Nicolas, I love the candle! Everything about it screams high quality. The fragrance is unique , luxurious, and it lingers in the air well after the candle is unlit. The container is a very interesting material, it's almost like frosted glass but sort of silky(for lack of a better term). I can't wait to see what's next. I am hoping for a tea set.

Much respect to her. I also started using shredded carrots in my chicken soup so each spoonful I get some carrots in my soup 😋makes a world of a difference.
Hi Nicolas, we all have a cupboard or draw that is full to the brim, watching you clear and tidy was very therapeutic, little suggestion put a sheet of kitchen roll between your most beloved plates, I used to work for Wedgwood, the biggest damage that is caused to plates is when you pull one out, scratching the glaze of the one underneath. HNY :)

May I suggest you try also Italian cooking, I see you already use many ingredients as a base for your dishes that are the base for most Italian dishes too. Also Italian cuisine is lighter than French cuisine as we rarely use sauces, so I think a cookbook with vegan/vegetarian Italian recipes would be useful to you. Also even though Italians may be a bit slower at catching up on new things, once they do they quickly become masters at it, and a perfect example of this is vegetarian/vegan or even gluten free cuisine. I'm an Italian living in Ireland and I'm always pleased to see the variety available at a really high quality once something new is caught up on!

"" i liked"" the red tiles!!!. But i do understand the darkness problem😉 i myself have added sticky tiles in my kitchen. Know that, u MUST, wash the red tiles REALLY good. I love the look of the new tiles/ & they were kinda inexpensive!!!!. It REALLY warms up the kitchen. I put them on upper part of sink.& where the stove is.... Hello Nicolas, I love your passion for a nice table with beautiful fine China and crystal glasses, classy!!! May I recommend to you that use some protection between your plates, in Amazon you can find a very nice dishes protectors made of felt, or even you can use paper towels that will help to protect the porcelain. And also that keep the humidity and make your dishes more safe.
