Oh, the Imoni looked scrumptious! And, I'd love to try Fu as a meat alternative. Such a wonderful variety of comestibles grow in Yamagata and the cuisine really reflects that. Hearty, rich food in the cold months; fresh, light food in the warm months. And, cherries! 👏My favorite fruit, other than mangoes fresh from the tree. Thank you Satoshi for acquainting Shinichi, and us, with beautiful Yamagata and its bounty!💙💚
This episode made me miss a long gone local place that had curry soba. They made their own noodles with equipment imported from Japan, and the flour used to make those noodles was also imported. So delicious. When that shop unexpectedly and suddenly closed, I ended up somehow finding my way to a Korean style restaurants instead. That spot is still one of my favorites too. Go figure. :)

This is what I love in Japan; there are so many regional specialities which makes traveling even more fun. The food looks delicious. I would love to try the fu. And I bet that this imoni is way better then what I can make because they use these regional ingredients.

I'm heading to Yamagata next week! I'm excited to see Ginzan Onsen and ski Zao, but I also want to check out Yamagata city, too. I drove to Yamadera and the near-ish koinobori display for Golden Week 2023, and I had the best time, it was so wonderful. I'll keep my eyes open for some of this stuff!
1:18 the yellow labeled bag looks like a type of Jerusalem artichoke, or sunchoke. Those are originally from the Americas. They're related to sunflowers.
Burdock, or gobo is thought to be the inspiration for Velcro..! The seed pods are covered with little projections with a hook at the end..you can throw them (they’re super light, not a danger by any means, lol..) at ppl, or your dog and they stick instantly, so you can see how easily the plant spreads. I loved studying aikido, especially the softer style of Seishiro Endo Sensei, his videos are so inspiring..you guys seem like ideal companions to spend a weekend with touring around Japan..I really enjoy your videos!

Just curious. Does Japan have fried tofu or firm tofu cousines? All I saw was the soft tofu and served as is. Kinda disapointing as tofu is delisous when fried and laced with teriyaki sauce. Is it lost in history or never was a thing in Japan ?

Yamagata truly has a bounty of produce -and so much more. We had planned to visit this year to film but have decided to go next year instead/

山形で知られているところというと、銀山温泉と蔵王くらいだったところ、最近西川町が国連のベストツーリズムビレッジに選ばれたらしく、世界に知られるようになるのは嬉しいなと思います。銀嶺月山とか東京ではまず見かけないので嬉しかったです。ベタチョコって子供の頃からあったけど、なるほど昭和39年からのなんですって。
