Cornstarch its shared in video. Arrowroot is starch from the arrowroot plant. Its also a thickner but as a rule should be used in dishes that need colder cooking while those that need more heat you should use cornstarch.

Baking soda is a base and it reacts with acid present in food and produce CO2 gas this CO2 helps in leavening. You can do a reaction at home take some baking soda and add either vinegar or lime juice . Baking powder is a mixture of baking soda and weak acid as both are in dry state so they dont react but as you add some water reaction will start but it will be very slow but if you add hot water you can see reaction as the reaction accelerates in the presence of heat . If you need bit more information when to use which you can ask me.

It only needs a liquid to become activated. You can substitute one for other the main agenda is to produce CO2 and there are also other ingredients that produce gas like when whisk butter with sugar or whisk egg the gases(not just CO2) from atmosphere gets into it and when you heat the mixture the gas expands and escape from mixture leading to sponge texture but it is not that simple think if gas escaped first but mixture didn't harden the cake might collapse and you will not get good sponge texture . Sometimes people check the cake just in starting so the cakes collapse to explain this think you are filling a balloon with gas and there is tiny hole in balloon as long as you filling gas in the balloon it will be in its puffy state now think some other guys is adding cement on that and you are still blowing air and you can blow for just for sometime and you want to maintain its shape so you have blow till cement hardens but if you suddenly stop blowing air before cement harden the balloon will lose its shape the same happens when you just close your oven just in start to check your cake in curiosity but the heat in oven was accelerating reaction that was producing gas and it was also responsible for expansion of gas so as you check your cake the heat stops and if the mixture has not harden enough it will collapse.
Arrowroot powder is also a starch but from a tropical plant, Maranta arundinacea. Both corn starch and arrowroot powder are used as thickeners but arrowroot powder tastes more neutral than corn starch.

It might happen when your milk is very hot..try bringing it to a lower temperature by take it off the gas and then add the brown sugar..and do not boil after adding it just let it dissolve in the residual heat..this process is used while adding gur or jaggery to milk so i think it might work with brown sugar too.
