Hello Marion! I've been a long-time follower and have tried so many of your recipes with great success. Just FYI, I'm Chinese and loves making Chinese food, and red cooking almost never involves using the fermented bean curd. I'm sure you can include that to adjust the saltiness and flavor, but traditionally it is not an ingredient in the red cooking sauce. This dish looks amazing though! I've been looking for a week-night red cooking recipe, and I really should try to eat more fish so I can't wait to make this!

Omg!!! This was amazing!! My guy lived is Alaska for a few years and is always disappointed when he orders salmon out in a restaurant now back in the mainland. So I was scared but he absolutely loved it!! Thank you! Not sure how to attach a pic but it was pretty as well.

I substituted the fermented tofu for gochujang and the greens for Yu Chou mieu. Turned out great tasting! I messed up the crispy skin though but it was still delicious!

i made this for dinner tonight... I didnt have red tofu paste, but I had some red bean paste from previous recipe and it worked a treat. My husband has just tested positive, so wanted to make him something full of flavour, and he doesnt like fish, but he thought this was great. Thanks Marion
The majority of salmon available for consumption is ocean farmed, which has a severe negative impact on marine ecosystems.. Pens full of salmon produce large amounts of waste -- both excrement and unconsumed feed. This results in water quality conditions (such as high nutrients and low oxygen) that are unfavorable for both the farmed fish and the natural ecosystem. Each pound of salmon produced requires at least 3 pounds of wild-caught fish, challenging the presumption that fish farming necessarily reduces commercial fishing pressure. The densely packed condition in pens promotes disease, a common problem in most salmon farms. Furthermore, there have been documented disease transfers from farmed salmon to wild populations, and the potential effects are serious. While antibiotics are used to treat some diseases, there are concerns about the effects of antibiotic-resistant bacteria on human health. Farmed salmon is fed an unhealthy pellet diet and therefore the fish is a natural beige colour. So for marketing purposes (because we all expect salmon to be a luscious red/pink colour) farmers add dyes to the feed so they change the colour of the fish from the inside out.
