WHEAT BEER CHILI WITH MEXICAN CHOCOLATE

- The Super Bowl is here and we’re making my Wheat Beer Chili with Mexican Chocolate, the popular chili recipe we made on the food truck. There are lots of chili’s out there and I tried hard to make mine a unique chili recipe. This is a super easy chili recipe with a few things that make it super unique and flavorful. Mexican chocolate gives the chili this awesome mole flavor and the wheat beer adds a nice balance to the richness. If you’re looking for Super Bowl party recipes, this chili is a must. I make my chili with no beans but it's a delicious sweet and spicy chili that was a big hit on the cart. You will see Cholula Hot Sauce featured throughout this recipe. Full disclosure, this video itself is not sponsored but I do have a relationship with them to do work on Instagram.

Marc Murray yes it is.
Sorry to be so off topic but does anyone know a tool to get back into an Instagram account?
I stupidly lost my login password. I appreciate any assistance you can give me
@Kaison Damon instablaster :)
@Luis Zain I really appreciate your reply. I found the site through google and im in the hacking process atm.
Seems to take quite some time so I will reply here later when my account password hopefully is recovered.
who else was disappointed he didnt put the chili right on the cutting board
💩 lol
Made this Thursday as I was nominated to make and bring chilli to a cricket club social evening. Followed the recipe with only one deviation as I added 120 grams of shredded chorizo. Everyone loved the chilli with almost all of them having a second serving. Loads of flavour, right spice level, and perfect chilli consistency. One of the best chilli recipes that I've ever eaten. Thank you so much for posting not only the recipe but the step by step video instructions.
Was it Mexican Chorizo?

My daughter is home for the holidays and she loves my bolognese but also wanted chili. I was thinking well bolognese is kind of like chili. Then I opened this app and there it is!!! I'm telling you, you are amazing. I bought the holiday cookbook and it was a game changer, especially the pillowy heaven rolls! Everyone loved it all! Thank you so much for rocking everything!
10/10 would eat at your food truck any day of the week! You seem like one of the people who really care about the food they are cooking and who just want to make good, wholesome food
I love the beginnings of all your shows, giving a synopsis draws me in and inspires, then ready to take notes but instead watch with jaw dropping amazement. Thankyou
Made this today and it was AWESOME! Most complicated recipe I've made in ages, really built my confidence. Thank you!
So, I made this last night, and my husband said, "holy F$#@ you need to enter this in a Chili contest" haha, I told him it was your Recipe! I can't say enough good things about this Chilli. It's very different from anything we've had on the West Coast of Canada! The flavours are so big and delicious. It was a task but worth it. Thank you a million times! This is now going to be my fams go-to chilli recipe. PS - we made a chilli hash for brunch today using leftovers, and it was next level delicious, Cheers ❤
Ok so I made this chili tonight. Wow! Just WOW! Unbelievable how good it was. I don't have a food processor so my chop was not nearly as fine as what you did. But the simmering down process broke all the ingredients down just fine. For years I've been using Wick Fowler 2 alarm. Wick is now officially retired. Great recipe! Thanks for sharing it!
Michael man, so glad to hear that! This is one dish Im super confident about so Im so happy to be able to share it with all you and to hear so much good feedback. Plenty more where that came from!
It’s 4am and I’ve easily binged more than half of your videos. excellent content and production. i’m a huge fan. can’t wait to try this recipe out soon! you’re the man
Honestly the best chilli recipe on UA-cam. Easy for home cooking too so ideal for any level of cook.
Bruh! I just spent the last 7 hours making this chili and everyone ate thirds, THIRDS! This stuff is bangin! I did add the dried guajillo and ancho peppers. Also I simmered mine an additional two hours to get the consistency to my liking. Wonderful chili. Adding it to the family recipe book. Cheers! 🍻
no need to apologize for cholula spice appearance, amazing stuff. this technique and spice blend looks legit bro, will have to try this for sure
Corn sprinkled on top thats almost burnt and coated with the same seasoning mix you use in the chili is a great topper too. That looks delish!!
We made this & it rocks! So many complex flavors going on, it's a winner!
Wow! Perfect. I'll try this week. Thank you.
Thanks for that technique. I’ve always been taught to drain the grease with ground beef. Didn’t think about just cooking out the moisture. Came to this vid from the bolognese one
I used bison instead of beef for this one. Tastes the same and has higher protein w/ less fat. Great recipe, huh?!
Cutting veggies is prob one of my favorite things to do....can be pretty damn calming....lol.
true.
that's facts
I love this! Too funny. I feel this way about washing dishes for some reason.
This should have 1 million likes and thousands of comments. What a great recipe...
This is a fantastic recipe. Thanks for sharing! I love the way you explain the techniques. So straightforward and easy to follow.
My wife went from being mad that I was in the kitchen all night making chili and sticky toffee pudding to giving multiple "This is VERY good!" compliments on the meal.
Update: Also got a "The more I eat, the more I like it." Double win!
This was a great chili Steve. I have not seen one like this, especially with some of these cool ingredients. Great job.
Thanks Josh! You're gonna have to try this one!
I have followed your recipes a have never had a bad meal thank you, I’m from the UK and managed to find every ingredient I just wanted to say wow this is the best chilli I have had thanks great job.
Hi Shaun, made this last night ate today for dinner with my partner. They said it was quite a different taste. I’m thinking I might have gone too heavy with the Chocolate. I didn’t get the Mexican chocolate he used just used 85% green and black. Thinking UK palates are more used to tomatoey chilli what do you reckon? Other half of the batch I’m going to add some chopped tomatoes to and see if it balances it out.
I made this tonight, it took me way longer than the initial prep and cook because I don’t have a food processor, but I wanted to make sure I got the consistency right, I chopped for an hour and a half, and I am literally sitting here right now with the food in front of me and I’m feeling emotions that I have not felt in years. I skipped the chocolate because I couldn’t find any. And I couldn’t find Worcestershire so I’ve substituted a home made plum sauce. This is what life is all about… Chilli Con Carne. Thanks for sharing this recipe.
I truly don’t understand why you don’t have more subscribers. Your channel is excellent and the recipes are awesome.
He likely will in time. You’re right, great recipes and production. Good quality all around.
Love Cholula - for years now! Never leave home without it!
The single best chilli I’ve ever eaten or made. Sensational! Thanks for the recipe.
Cholula is the sauce of the gods. Mixing with soured cream is a great idea.
Valentina is better and 1/3 of the price. I said it.
@@privatecitizen5264 is it available in the UK, I've never heard of it
@@BT-kc3ee That I do not know. I used to only find it in most Mexican grocers. Then more recently, Walmart started to carry it.
@@privatecitizen5264 disagree Cholula I'd much better
the sumac is what I noticed the most and its such a great addition!
Really excited to try this recipe! It looks super flavorful. I'm really curious to see what the sumac brings to the table. Being Persian, I'm very familiar with it, but I wonder how it blends with some of these other spices🤔☺️
You're rapidly becoming one of my favorite chefs on YT. Hope you stick around for a while 🥰
Hey watched you for a while. Started getting back into cooking. Made this last night couldn’t quite get all the exact ingredients here in Scotland but got substitutes close enough. Normally chilli is really bland with the packet mix you get. I can say this is in another realm completely, an incredible chilli! Will definitely be making it again! The beat in this video is fire 🔥 too! The quality from start to finish of each video is fantastic!Congratulations on an excellent channel, your effort and passion is appreciated!
Now that is legit. I need to get a food processor.
Ha! I bought myself one for Christmas and it's still in the box! I don't know what to do with it...I'm afraid of the damn thing. Help!
@@JB-os6nk it is super helpful! I use it to shred stuff in large volumes. Mine has a dough blade too. I use it for a bunch of stuff.
Right? Totally therapeutic to me.
I love your channel, the way you show recipes is different grom every other channel, moreover you show recipes most people didn't even think of. I've tried several of your pasta recipes and they are great tbh. Good job! (I might have made some mistakes, because english isn't my native language, pls be polite to me)
Sumac is new favorite of mine. We have a hardy Indian population around here so its very easy to find. Gonna have to try this.
Looks good I'll try it. I'm from San Antonio, TX. This is the town where chili was invented.
WOW, I have my secret go to Chili recipe; but you have given me a new one to add to my Chili favorite. This looks amazing and I have never seen it before. Thank you for enhancing my love of good food. Keep up the good work and know that you are appreciated 👍
This looks really good my wife Ricki never misses your recipes now I know why ! She's made a few of your recipes and there great thank you.
Ahh!! Ricki, she’s so nice! Thanks so much for stopping by! Glad to have you here
That chili 🌶 looks amazingly delicious 😋!!!!
As an Arizonan, Cholula is AMAZING
Whoever makes this for the Super Bowl is the true winner
As long as its not Tom Brady
What an awesome recipe dude! Can't wait to give it a try!
Best chili I ever made! Thank you!
This looks incredible
Alright L&G….this chili is simmering on my stove right now…and, of course I’ve had several tastes of it…..and I can tell everyone….WITHOUT A DOUBT…that you HAVE NOT LIVED….until you make this chili recipe…. Chef Steve is spot-on… the flavor is sweet and spicy and amazingly complex….I got the Mex chocolate on Amazon and used the Guajillo Chile one… Also, it took over an hour to sweat down the veggies and the meat, but be patient!! It’s worth it… the rest of the recipe goes fast after that…
Man oh man…This chili is seriously amazing…. You gotta make this…and yes….people will be knockin down your door over this stuff…. Chef Steve… I’m a kraut from NE Ohio, but I’m converting to Italian…Bigtime….Well done Sir and thanks for helping me be a better cook…. Much Respect….Max…..
This came out so good. The heat level was perfect and the flavor was unbelievable. The only changes I made were to substitute some of the beef with pork and add pinto beans at the end. Another amazing recipe. Thank you.
I am late to commenting because since I first watched this video I have been to busy making and eating this chili. This is way to good! I make it quite often in large batches to freeze and enjoy through the winter. Everyone in the family loves it. Ps due to the not so chunky nature of the recipe it's great as a topping to burgers and hotdogs.
I just made Chef John’s Firehouse chili and it was great. Yours looks next level though! Gonna try it soon
That is 100% the best looking chillie I have ever seen
I made this last night. I added a can of black beans to mine. It was surprisingly good! Not much different from my own recipe, except for the beer & the brown sugar. I’m in the chili with beans category.
I've just made this with the closest ingredients I could easily grab in the UK, using a pound each of beef and pork since that was what I had on hand. Will be using as a condiment for burgers and hot dogs over the next couple of days. Fantastic recipe! Thanks!
“Since nobody wants to see Tom Brady play football anymore”
Hahaha, your Giants fan within you is showing brother. I said it on insta already but I’m so stoked that you’re starting to get sponsors. This recipe looks legit, def gonna try it out. Great shit as always.
Haha. Thank you brotha!
@notanothercookingshow this chili is insanely good. I gotta say I have tried maybe 4-5 of your recipes so far and each one is on point! I have tried a lot of UA-cam recipes and yours by far are the most consistently good. thank you so much!
Wow that was almost to the T of how I make my chilli i started doing it because of your bolonese sauce.
That looks phenomenal!! And congrats on partnering up with Cholula!! Their Green Pepper sauce is my favorite!
Thank you Rosie! They are the best
Do you have a video for the pickled jalapeños/carrots?
I love those. My fav taqueria has other veggies like cauliflower in it. So good.
ua-cam.com/video/16gCG-Ljc80/v-deo.html
I have been happy with a three-pack from Amazon of chili powder......stores easier than larger dried whole chilis.......has Guajillo powder, Ancho powder, and Chili de Arbol powder.....about two ounces each for maybe 15 bucks......I mix them up when I make chili just like you do.
finding this channel and already on my 3rd watch with the bolognese queued! who else didn't know the onion lines trick?!
Great recepie and channel.
Thank you!
I am here to say I am a no-bean chocolate chili convert! LOL I was a little skeptical to make chili without any beans, and although I'm not opposed to adding chocolate to chili, I didn't think it would be a gamechanger either. BOY was I wrong! This chili blew my mind, it's my new go-to recipe. I did make a couple tweaks... I added one dried habanero (just broken in half, infused and removed at the end) for extra heat, and I did half Cholula and half Chipotle Tabasco (just love the chipotle flavor). This is now the chili I will be making over and over, every year :)
wow that is some recipe to be taken serious, one can see that someone planned it with love to the dish. Definitely gonna try
Yo, so it's eight in the morning, I got off work a couple hours ago and I had a mad craving for some chili. I'm usually a pretty basic beef, beans, 3-spice guy but I watched this video awhile ago and I had the urge. I only had Green Bell and Jalapeno in the fridge and I had to sub cocoa powder for the chocolate but man on man, this chili is the business. My only wish is that I could have bought a bowl off the truck from the man himself back in the day.
Good job Stephen, as usual you do not disappoint
I think I need to take some notes from your chili. I add beans in my vegan recipe, but never though of blending up the veggies, and just left them small-medium dice. The chocolate is a great twist for depth!
Thanks Mike! The chocolate is the real game changer here
Years ago I started adding a tiny amount of unsweetened cocoa which not only intensified the color of the chili but its flavor too---which should not be identifiable. Start with a 1/4th teaspoon. In this case less is definitely more.
@@msr1116 Reminds me of the cinnamon hack. If you can taste it, its too much, but just adds so much depth
That looks absolutely out of this world dude and I can't wait for you to do the nachos with this because I was thinking the whole time I bet this would make great nachos
Thank you so much!! Gotta have those nachos when making chili in my opinion
cannot wait to try this
Iv never added chocolate to my chilli.. I do add a scoop of a good instant coffee which enhances the chilli Flav but I deff wanna try the choco idea !!! This looks deeelashhhh
You are really inspiring, thanks for your videos and the effort you put in
Amazing recipe!
Thanks ❤
I like the idea of using sumac, wheat beer and Mexican chocolate, those would add such nice flavor.
You're on my page...you'd love it.
This is simmering on my stovetop right now! Smells amazing! As I said below, I’m going to put this over steamed Vienna dogs and steamed poppyseed buns!
I wish I wasn't in school so I could wait and watch this.
NEED TO TRY THIS FOR MY CHANNEL!!🤩🤩🤩
I made this pretty much exactly to your recipe. Very rich and complex chili. Very enjoyable. If I were to add beans to it would you have any recommendations as to type and when to add them? By the way, the chili spice mixture would make a terrific rub for many meats. With no salt or sugar it makes it a very versatile base. Thanks!
Yea that rub is basically what i use as a rub for bbq. I’d just add the beens with all the liquids. Some kidney beans would work well. Thanks for watching!
@notanothercookingshow just make this chili recipe!!! It’s life changing!!!! Amazing flavor and recipe!! Going straight to the recipe box.
That chili looks amazing. Thanks for sharing the recipe!
No problem brotha!
I like the attention to detail. I turned the heat down and cooked the veg and tomato paste a little less but still too bitter for my preference for chili. And between the carrot, tomato and brown sugar too sweet also. I wouldn’t make this again.
I think the bitterness could also be from the beer and just the long cook time. I like the sofrito as a base though. I will steal this idea and go back to my normal method.
Hi mate! Love the channel and love this recipe! Just wondering when I should add beans as I want to follow this but add a few different types of beans?
I love everything about that title.
You could first thing fry tortilla chips for added layer of flavor.
You could also add 1 teaspoon of Garam Masala instead of cinnamon.
Sincere question, why add the tomato paste after you browned the beef? Don’t you want direct heat on the tomato paste to cook out the tinny flavor?
This is an excellent recipe. It’s so good for chili dogs too.
ya this is a good one
Adding so dried Thyme, Basil, and Oregano took this to another level. No more than a tsp each. Id add about half the volume of Brown Sugar recommended. Adding a bay leaf dry or fresh bay leaf into the simmering process is necessary. The dish is already immaculate as is; however, I wanted to add my own twist to it. I might add Marie Sharps hot sauce in next time and use celery instead of a carrot.
When you mentioned the Mexican chocolate gives it the Mole flavor, you got my family’s approval… you know your shit !!!
I cannot wait to try this one. Your version is so complex in a good way. I usually make my own spice mixes too. Have not tried Sumac yet. Thank you, Stephen.😍😎😉❤️
Most of my recipes are quite simple...this one deviates for sure. All about flavor development.
Mind sharing the pickled jalapeño recipe?
Knew from your very first videos that you were gonna make it, good for you man.
interesting recipe. will beans work in place of the meat.
It does look like a really good coney sauce..! I should try this next time I am doing hot dogs.. TY!
I like your bell pepper technique
mmmm this look delicious
Hi Steve, would you recomend squeesing any excess water out of the processed veg in a cheese cloth before cooking to speed up cooking out the moisture?
Marco Pierre White was the first person I saw using chocolate with chili. It really is the secret touch!
Hello recent subscriber here. Amazing channel with great recipes and amazing editing. Congrats and thanks for all your work in providing us foodies with such great content! Chili is my obsession and has been for years and while I finally settled on a recipe I really enjoy, I am always willing to try something new. Yours is surprising with the addition of all those peppers. I am wondering if I should add a little bit of Thai red bird's eye peppers that I have in my freezer? And I usually add some unsweetened cocoa powder but never chocolate so will give that a shot . Thanks!
Dude you cooking great 👍🏻
I got a cholula ad while watching this 😂
love your videos
Goddamn Stephen that's a lot of layers of complexity in terms of flavor, but really really simple in terms of process. Will definitely be making this someday yumm
Excellent looking recipe. Gonna take a crack at it this weekend. If one were to use fresh chilies which would you recommend, and how many? I have Guajillos, Pastillas chipotles and anchos on hand.
I used to make it with fresh chili’s, used all of those except Chipotle’s. But try whatever you want. I don’t think you can go wrong. Chipotle’s are the only one that might change the flavor from what this recipe is but would just add a Smokey flavor to it
Hey. I added cinnamon and cacao to my chili. Major flavor boost. 👍
I cut onions this way all the time! You're the first cook I saw that used this technique. You will automatically get diced onions. Never understood why folks sliced through the middle of the onion as well.
