Oh, this looks perfect, we usually do a ham for either Thanksgiving, Christmas or Easter, we alternate it with having Turkey or a nice roast. So the leftover ham and always wonder on what to make with it. Lots of quiches in the past but will definitely give this soup a go.
Well... this went down a treat on a rainy cool Chicago Saturday! I only cook for myself, so halved the recipe in my little 2 1/2 qt. crock pot. The only substitution I made was to use a lovely smoked sea salt in place of plain, as I do love that smoky flavor. I was so pleased to have dinner in the pot & kitchen cleaned up before noon that I messed it up again & made some herby garlic cheese bread to have with, & some espresso kissed brownies w/ pecans for dessert! OH & ~ when I went to add the ham, I tipped in the whole 8 oz. packet before I remembered I was making 1/2 recipe ~ 😯 ~ oopsie! Seriously hammy & altogether delicious ~ so glad to have some leftovers for the next day or 2, as more Spring rain & chill lies ahead. Thank you for sharing, Cheryl ~ 😚 !
I make a soup like this and here in USA we refer to it as a "chowder" because it's cream-based rather than broth-y. Instead of ham, I used chopped beef kielbasa (Hillshire Farms brand) and add it about half hour before the chowder is finished. I chop the kielbasa into coins then half moons. If you overcook kielbasa, it loses some flavor but half hour at the end of the crockpot cycle is perfect. Thank you for your recipe, it looks delish just as you made it.

Hi Cheryl! Looks delicious & I'm sure it tastes the same. Just an idea (not a criticism), how about adding a chunk of uncooked gammon joint at the start, remove it near the end, then shred it & adding it back into the soup? It's what I do when making fabada. 🙂❤
We had hail belting off the windows the other day, could have done with a big bowl of that soup & some buttered bread to warm me up. Haven't made soup for a couple of weeks & you've fair put me in the mood now. If you get a chance try using white pepper with tattie based dishes. As well as the mild heat it add a "funk" that goes with spuds really well. Cheers for the recipe Lucy & Cheryl, think I'm going to add some sweetcorn to mine too. 🥣

Ive made potatoe soup with bacon instead of ham and it was pretty good. The trick is to cook the bacon in the pot you are going to make the soup in. Dont burn it but get as much grease out of the bacon as you can. Take out the bacon and add water and chopped potatoes and chopped onions. Cook till it it's almost done and some of the water is boiled out. Add bacon and milk. Cook potatoes til done on low heat. Chopped green onion tops or chives add nice color. Add salt, pepper snd a bit of garlic to taste. Serve with shredded sharp cheddar and/or sour cream. If it needs thickening before you setve it add dried mash potato flakes until it is as thick as you like.

Never thought about ham and potatoes (even tho I am 40% Scotts). I didn’t have parsley so added Oregano and because I’m in the West, added a little Cayenne but other than that kept to your recipe. You are a genius.
Looks yummy. I have potatoes left over from making a Shepherd's pie on Monday so this will be a good thing to use them up. Still cold enough for soup here.
It's finally soup weather now the evenings are a bit cooler here in Queensland Australia. Had a few leftover ham steaks so I've diced them up and got this soup on the stove top for dinner tonight. 😋
It’s in the crockpot now… 8 hours at Low. We’ll see how it is! Oh, am using my own bone broth instead chicken stock… EDIT: It is very, very good! Homemade bone broth instead of chicken broth, and homemade crème fraiche instead of sour cream. Otherwise, exactly the same. My wife gave it the ‘Restaurant Quality’ thumb of approval! Rare!
I'm really late to this party. You can get Coleman's in a liquid (well just not powder) form?? I'll bet that is delicious. Does it have a little bite to it like the powder does? I've been sick and can't seem to get warm. I have this started (veg about half prepped). I think I'm starting a bit too late for the crockpot, but I am tempted. Not really wanting to deal with on the stovetop. Here's too a bit of comfort.

Just an FYI. If you don't have cornstarch you can use instant mashed potatoes flakes. Especially with potato soup.

Corn starch in USA/canada corn flour in UK. In USA/Canada, corn flour is a fine milled version of corn meal.
