Ingredients:
1) Usoi Kangsu:
Usoi / tender Bamboo shoot , 500g ( to be soaked in water for a minimum 3/4 hrs or overnight )
White peas, 1 cup ( to be soaked in water overnight)
Green chillies & dried red chillies ( 15 to 18 pc)
Ngari/ fermented dry fish , 1 big or 4/5 medium pieces
Salt , as per taste
Local herbs for garnishing ( matangton/ lemon basil , toningkhok / fish mint, phakpai , coriander leaves, onion)
2)Hangam ga Nga ga Thongba :
Mustard greens 🥬
Fried fish , rohu 7/8 pieces
Mustard oil
Chopped onion , chives , ground hooker chive’s roots, garlic, ginger
Whole cumin, cumin powder, coriander powder
Turmeric & chilli powder, Asafoetida, salt to taste
Citrus Latipes / Heiribop
Warm water for gravy
chopped coriander leaves
3)Thumyakpi khamen ngouba :
Thumyakpi/ salted sea fish, 6/7 pc ( medium)
Brinjal, 750 g
Onions, chives , hooker chive’s roots , ginger , garlic
Whole jeera , cumin & coriander powder
Salt to taste , half slit green chillies , chopped coriander leaves , refined oil
