Watermelon Rind Preserves 2

  • 1 med. watermelon peeled and insides removed
    cut the rind in small thin pieces
    cover the rinds in water and cook on low heat until translucent. Drain the water off, measure rinds and put back into pot. Add 1 cup of water and sugar to make 1/2 the amount of the rinds. Add 2 tsp. cinnamon, 1/4 tsp. ground clover and 1/2 tsp. ginger per 8 cups of rinds. Cook over low heat until a very thick syrup is made and the rinds are almost candied. Put rinds in sterile jars and seal with lids and rings. You may boiling water bath them for 10 minutes. Enjoy on home made hot buttered biscuits.

    I don't know if you remember me or not but I was watching your videos again. The watermelon rind preserves. I've not seen any more of your videos. I hope you are still filming them.     Please work on keeping the camera steady. I was getting motion sick watching the video. Why is no acid added? I like the spice combination.

      I am sorry you did not like the video, but we are not trying to be professionals like others are. I use my Girls to video for me as I have to use what resources I have. I do not add acid but if you want acid add it. You can add whatever spice combination you would like.
